Makes: 8
Ingredients:
4 cups (600g) of all purpose flour
Salt to taste
1/2 cup of vegetables oil
Additional flour
Additional vegetables oil
About 3/4 to 1 cup of hot water
Preparation
1) In a large bowl add flour, salt and 1/2 cup of oil stir, add water little by little knead until form a soft dough. Cover and let sit for 10 minutes.
2) Divide the dough into 8 equal pieces, roll until the thickness is about 1/4 inch thick. Brush with oil and fold according to the video. Repeat the same process to the rest of the balls.
3) Heat a pan on medium. Roll the folding dough to the thickness of your choice or please watch the video for more info add to the pan.
4) when the parata is starting to create bubbles start brushing with oil then flip and brush the other side and remove from heat

One bit seems to be missing is beating the paratha down on the rolling surface after it is cooked. Hold the paratha vertical with one hand and press it down with the palm of the other hand. Repeat 2-3 times with different positions around the circumference of the paratha. This softens the paratha like a cloth and ensures it does not harden over days. This brings back memories of my mother cooking the parathas in the evening over wood fire. In those days we used to make our own breads instead of buying from the 'boulangerie'.

Thanks for sharing. I tried this last night and it turned out pretty good. Only problem was it tasted a little too floury. I think I coated it with too much dry flour as I was rolling it out into circles, and then added more flour when rolling it out into squares. I'll have to try again with less flour whilst rolling.

Hello laila ..did it remian soft after several hours ? Suppose you made it morning. Will it remain soft evening?

Yes but not same as you make it right away try to cover it tightly
