I’ve been waiting for this! I made these cookies last year but with flour and refined sugar, I’m amazed you can get the same chewy texture without those things!

Well if you are going to attempt a ginger molasses cookie makeover of your own this year I can tell you sweet potato in the batter is NOT the way to get the right texture😆😂 lol It took a few tries, but so so happy with how they turned out in the end!

YOU ARE A GOD SEND!! I literally was thinking to myself yesterday what I could do with my left over coconut sugar, tapioca starch, and applesauce from thanksgiving-then bam! This recipe looks amazing and I was obviously meant to try it. On my to-do list for tomorrow

Omg yesss please!!!! I am making these tonight, I was going to use the crust from my gingerbread pumpkin pie to make cookies but these are easier and I am down. Thank you so much!

I've seen pie crusts made of cookie so cookie made of pie crust is actually kind of clever. But I think these will be a bit fluffier and pretty delicious I must say👌😋 I hope they turn out perfect, enjoy Amanda!

Hi Natalie, I just finished making these (double batch) they are just as you say soft and chewy. They have just the right amount of sweetness. My ginger is a bit week in the cookie. I think I needed a new jar to give the taste a bit more kick. I did not put on the added sugar but, I still wanted some visual contrast so, I sprinkled on some coconut flour. It took about an hour for me to make.

YAY!!! Soft and sweet but not too sweet, right? I am really happy to hear that you like them too Kathy! Going straight in for the double batch too--I love it :) And that's a great idea with coconut flour on the outside, it really is mostly for appearance anyways. A fresh bottle of ginger will certainly help, or just use a bit more or even fresh if you have it. Anyways, thanks as always for testing them out and sharing your thought

Do you think you could try your magical fruit talents on some black bean or zucchini brownies? There are many recipes out there yes, but I still have not come across one that is fruit sweetened, and you never disappoint!

I'm not a huge fan of beans in baking, but zucchini brownies I could definitely do! It may not be till after the holidays, but I'll add it to my list to work on soon😊

I’m so excited to try these, they look like the perfect festive follow-up to the soft-baked chocolate drizzled pumpkin cookies, which I’ve already made twice by the way! Just out of curiosity, do you think green banana flour could take the place of tapioca starch? I’ve got some in my pantry and want to try experimenting with it more. Thanks!

Yes the perfect cookie compliment to those pumpkin ones--I am so happy you are enjoying them🤗 Hmm I don't think banana flour will have the binding capability that these need unfortunately. Coconut flour is SO crumbly that you really need a sticky starch to work with it, and I don't think banana flour will be enough. Sorry!

Not for this one, coconut flour won't bind enough by itself. But there is an oat flour option that doesn't call for the starch if you prefer :)

Hi Natalie! I'm wondering why this recipe calls for blackstrap rather than just regular molasses. How will it affect the cookies to use regular unsulphured molasses?

There is an oat flour option included in the recipe that doesn't use either of those :)

These look so great! I can’t wait to try them. I have a question though. Is tapioca starch/flour the same as cassava flour? The latter is extremely expensive and I can’t tell if it’s just a marketing ploy or a different product! Thank you! Love your channel as always

They are actually different. From the same plant, but different in how they are processed and work differently in recipes. Cassave flour is the entire yuca root dried and ground while tapioca starch is just the starchy part extracted and then dried. So cassava is kind of like the whole food version of tapioca, but much easier to find and binds more. But if you ever taste them or try cassava flour you will realize they do actually tast quite different, so it's not all marketing :) This explains it better than I did: draxe.com/cassava-flour/

If you want to use all purpose flour I'd recommend following the direction for the oat flour option :)
