hope you don't mind a question. Wont keeping the cake so long in the oven cause it to be dry because first it is 10 mins in a switched off oven and then another 15 mins, that heat might dry the cake. If there is something I should know which will help in future baking I will be very happy, thank you Florency

Hi Larry! Great query! So the drying of the cake can happen if it is over baked. This is why it is best to stick to the time mentioned in any cake recipe, in general. Most professional bakers even choose to slightly underbake their cakes. The latent heat in the oven will allow the cake to bake to perfection in the next 10 minutes. Keeping it for additional 15 minutes with the oven door slightly ajar won’t affect it greatly since the temperature is only dropping. The gradual drop in heat prevents contraction which may occur when there’s an abrupt temperature change. Hope this helps😇

which oil are you using???
