He actually made that as healthy as he possibly could. Baked not fry the potatoes, using a skillet instead of a non stick pan, used olive oil instead of canola, and made the dish somewhat alkaline by adding the lime.

I tried this recipe for dinner today. I used chicken instead, cut it into pieces, mixed it with taco seasoning, stir fry with onion , when cooked, mixed with teryaki sauce and put it in the oven. Thanks for the recipe it was so good.

🥰 This brought back memories. I started making something similar (potatoes were cooked on the stovetop instead in a cast iron skillet and topped with cheese) for my kids. It started off as a struggle meal bc we didn’t have 2things that matched 😩😂 but it was in rotation ever since. We call them taco taters. Haven’t made them in awhile.. might cook it tonight 😋

Thanks for the recipe!😋 Don’t use your cast iron skillet if your going to use tomato the acids from it will make your cast iron reactive, I just learned this so I just use my stainless steel when I’m gonna add tomato paste 👍🏼

Making rn 09/19/24 Subbed ground beef for ground turkey. Potatoes and tomatoes from my garden Ms Dash southwest Chipotle seasoning ( couldn’t find the powder) And I don’t have YOUR Cajun seasoning,but I DO have Louisiana Cajun seasoning Mashed avocados because I didn’t want to pay for store bought guacamole,but purchased sour cream The mixture from the potatoes is HITTIN’!!! I tried this for the first time and it was a hit!!! I have never used chipotle and cajun powder before, & it did not occur to me to taste those spices until after I tasted my already baked potatoes. (Amateur mistake) I felt my whole mouth and ears burn from the spice on those potatoes!😂 Good thing I tasted it before I started putting those spices on my beef. 😂 But hey after assembling everything, with the beef, sour cream, pico, and cheese, it came together sooooo well! 💕The whole fam loved it! It tasted like legit chipotle bowl! To amateurs like me: Pls taste your spice before putting it in. Chipotle powder is hot hot hot! Cajun is salty, delish, with mild heat. 😆

Listen…just a tip but you can do it however you please cause that’s your food and your money and I’m not bugging BUUUTTT ….if you boil those potatoes after you cut them in some water and a splash of vinegar for 20 minutes and then drain the water, dry them and season them with exactly the same spices you will get better results. Don’t say I didn’t tell you !
