Do you know of a way to harden ungoogled-chromium like how you can harden firefox with about:config or g.hacks?

There's no real need to do it. ungoogled Chromium already has all google elements and telemetry stripped from it, and AFAIK as long as you keep UG up-to-date then security shouldn't really be a massive issue.
