I really liked how technical and process-focused Sohla's delivery was. The details about why she was taking certain steps (food processor > blender for example) really helped me understand how her process created the final result. I think it makes a really good addition to the perspectives on food the test kitchen has.

I understand your cause, but think that she signed a contract over certain duration. It's a business and she is just another player at one end of the bargain. Look, I made my PhD studies with a grant of less than 30K per annum. In the Bay Area, which is similarly overpriced. Do you think that a scholar job in the lab is much easier than the chef's in the test kitchen?

I always assumed they did before, so the first time I heard it mentioned in a recent video (not this one) that they just started composting, I was lowkey horrified. I'm fairly certain NYC restaurants of a certain size are technically supposed to compost by law. But the test kitchen would be in a different category, so I don't think there's any composting legislation that would apply to them. Regardless, it's awesome that they finally started.

I've made this two times already, it's one of those things where you don't need any crazy ingredients and you can make it any time with anything you have on hand. First time I've followed the recipe and the second time I used just onions and cilantro instead of parsley. It's really about the lentils. I keep coming back to this video. I like the energy, the calmness, the professionalism. Same reason I keep rewatching Chris's videos. And this one has both of my favourites!

After this everyone always asks Sohla for help; tempering chocolate, spices, opinions, etc. Sohla was a great choice to bring in the kitchen 💕
