Thanks. The dough recipe I use is from this video kzbin.info/www/bejne/bH-ZoKFmfMaHadksi=TM-NqnuSvrfXeMHu The recipe is below the video. I use Cento Anna Napoletana Tipo "00" Flour. As far as the cook. I run full blast till the center of stone gets around 800 and then I turn it down to low (By the time the stone hits temp the top is well over a 1000 degrees) If I want or need more color on the crust I crank it back up and lift pizza up close to flame. Keep in mind this all happens in about 2 minutes and 4 to 8 turns.

The toughest part of cooking with this oven is getting the bottom cooked just right, which is also why I turn down to low. I am also apt to take my metal peel and cover the top of pizza for a few seconds.

Curious which wooden peel you're using. Some I've seen on Amazon look oddly thick.

That peel was a gift to me many years ago. It has been sanded many times to clean it up.

Nice. I'm happy with mine still. Quick tip, start with a simple pizza as the chance of a bad launch or burning pizza is typical .
