Sooji halwa is a simple yet delicious and yummy sweetened semoline fried in ghee and garnished with nuts. Its also popularly known as Kesari bath in the south region and Sheera in the northern region of India.

Ingredients
1/2 cup Butter/Ghee
1/2 cup Mixed nuts and raisins
to taste Saffron(optional)
1 pinch Salt
1 cup Sooji(also called Rava,Semolina or Farina)
1 cup Sugar
2 1/2 cup Water or milk
Directions
• Melt butter in a heavybottomed pan.Add nuts and then raisins and roast until very lightly colored and the raisins swell.Now add sooji and roast on low flame heat until lightly colored and fragrant.Add sugar and water/milk and increase heat to meduim-When most of the water is absorbed, add a pinch of salt and saffron if using.Stir in gently and cover with a lid-Cover and rest for a few minutes before serving

I prepared the Sooj Halwa today. It turned out delicious ! I did add 1/2 milk, 1/2 water and saffron..I gave a dish to my neighbors.. I loved it. Thank you Sanjay.

Great VahChef said we have only saw 1% of his skills...wow! I wonder what happens when he revealed the other 99%..... amazing chef. Even I myself followed his Chicken & Vegetarian Briyani recipe a year ago and surprised my whole family as it turned out so yummy! It shows how good his teaching skills are. Thanks VahChef!

I was one and only daughter of my family with two brothers and I was not allowed to cook by my loving Mom. Marriage changed my life and Kitchen was a world of alien to me. My Mom in law who can never be a good trainer failed to teach me instead hurting me with her words. Thanks to VahChef... you have made my life better. Any dish I cook is trained by you and you are my Guru. In olden days grandmother and mother would teach cooking but for me its VahChef who taught me cooking the right way and the best way. Everyone at home are shocked by my cooking and they agree am a better cook than my mom in law now..... Thank you Sir........

8 am on this Saturday morning, I am sitting and watching this recipe. I have to prepare this now for my navratri Kenya puja. Now means in next few minutes. :) My mom takes 3 part water. She heats it up in a separate pan and then mixes sugar. She adds this combination to the roasted suji with almonds. I am going to try it now. Hope it comes out good. It's for prasad that too for kids.

Sanjay I tried this yesterday....and it was out of this world. Me and my husband couldn't stop eating it. I added couple things to give it little more zing...i added my favorite fruit essense (pineapple) and one medium size banana (nicely mached) right after adding the sugar. It was too good. If you ever try this combination and like it, do let me know what you think. You are doing a great job

Yes, I totally agree with you. Crushed Cardamom, cardamom powder or even whole cardamom gives a different aroma to the Halwa and many other Indian desserts. Also garnishing the Halwa with roasted and diced almonds gives it another dimension!

Big fan of you sir, the way you simplifies the recipes. In ur earlier days your body language reminds me of pawan kalyan , and ur costume is similar to pspk in kushi , marshal art scene in the beginning of the movie.

Hi wahchef , I follow ur recipe regularly . For suji halwa you can add bay leaf and cardamom in ghee at first to get a more nice aroma .

I did this and it came out wonderful. Except I added a 1/4 teaspoon freshly crushed cardamom seeds and fried them with the nuts and raisins. The aroma of the cardamom was delicious.

Hi Vahchef - I am a big fan of your website... I made the Sooji Halwa today and it came out very well.... My husband is not a big fan of sweets but he likes Rava kesari.... I have made this many times before but struggled to get it without the rava forming lumps... Your tip of adding the sugar to rava was very useful and I got a tasty, lumpless and pretty looking Rava Kesari today...

anna, thanks for the recipe, 1) 1 cup semolina with 1.5 cups water/ milk is fine...but when it is 2 cups semolina, 3 cups water/milk is insufficient.....you need much more of water/milk 2) dropping the raisins right in the beginning turns them into balloons indeed, but leaving them till the semolina turns brown , burns the raisins... I have attempted sheera as many times as Edison tried inventing the light bulb...your video helped crack the "sheera code"...Thanks

I use a little less than 3/4 cup of sugar, even so it's quite sweet. I also add some cardomom in the kesari (sooji halwa). I hope the kesari gets better with experience. The first time I made it, it was watery with some lumps and too sweet. Next time I will make it the way vahchef has made it, but without adding as much sugar.

Sanjay, U R Kesari Bath came out too good. I tried to make it couple of times but it used to come out like a ROCK. I tried ur receipe and it was amezing!!!!!!!!!. My hubby loved it. My hud is Egyptian. .He loves basbusa, an Egyptian sweet made with the same ingredients. ..so I want to make him our desi version..Thanks so much chef...you are like my mum in her absence...I learn it all from you.

Hai chef ,I am a great fan of yours. I learned making biryani from you.and was a great hit. After that I started following you.. and one more thing I love the way you talk, sometimes it brings smile to my face..

Chef, you are awesome. I add 2 cups of water and half cup of milk (hot- so rawa won't form any lumps), it gives very rich flavour.

+VahChef Thanks for the recipe. I made this first time and my wife loved it. The only thing which made this dish very different from the one I used to eat in my childhood was the butter. Excellent!

Hello Vah Chef, Sanjay sir! Your cookery channel is very nice! I've never comes in my life and suddenly had to recently when my house staff took a long break. Thanks to your channel I've been inspired to enjoy cooking! Your recipes are very good and easy to follow, but what I like most is the fact that you are so humble and down to earth without any pretenses.
