I hope you see this in time!!! I want to attempt this next week. After you freeze overnight, do you have to let the fondant defrost so that it can wrap around the cake? I would think frozen fondant would crack

Hi! No, it doesn't really freeze solid and is still able to wrap around. At least in my freezer, that is what happens;)

I would wait if you have time. It may still be a little tacky, but shouldn't come off on your finger. Make sure you add a good layer of shortening to your transfer acetate too;)

Found this on a thread Serves/Yields: 1/8 cup Prep. Time: 2 min Cook Time: 5 min Category: Southern U.S. Difficulty: Easy It can be used when needing a glassy like appearance on fondant. (ie a windshield like on this car It dries to a shine. I have doulbed, tripled with no problem. 1 tsp gelatin 3 tsp water (out of tap) 1 tsp liquid glucose ( I used corn syrup) Sprinkle gelaitn in the water. Let stand until it becomes spongy. Dissolve until clear over hot, not boiling water. Add liquid glucose/corn syrup and stir until ingredients are well combined. Pour into an airtight container. The mixture will become hard/stiff. To use it, heat the varnish in a container of hot, not boiling water. Paint onto item to be vanished while mixture is still hot. DO NOT KEEP IN REFRIGERATOR

This is stunning! I have a question please. In Australia we tend to have upright freezers so we couldn't be able to put the fondant in the freezer. Can you leave it on the countertop?

I can tell you that I did use an upright for the these cakes and they were 6" cakes. Any bigger and you would probably be better off with a chest freezer or commercial.

hi Mary, love this cake! Do you think this will be ok for a wedding cake, considering it will be on display for about 4 hrs in a ballroom, so people dancing, heat from lights, natural humidity since it will be next to a lake, etc. Should I add more gelatin to it? or any other sugestion?

I did leave this one on my counter for about 3 hours and it was fine after being in the fridge overnight all finished. But the added elements of lights and what not, I can't promise anything.

Wouldn't fondant fall apart frozen or am I missing something? It looked like you put the mirror glaze on the fondant and said to pit in freezer best overnight? Did I hear incorrectly? Sorry. Thank you for the tutorial.

No you heard right! It does not chill rigid, it chills firm in the freezer. Might have something to do with the mirror glaze keeping it more protected? I have kept sheets in the freezer for up to a week and had no problem.
