Try southeast asian. One of the most diverse food geography, and we still retain many resourceful cooking techniques. One of the dishes we have here involved mixing a cold can of sardine with sliced onions, tomato sauce, lime, and a single chili padi (optional). Delicious stuff for the tropics here.

I'm surprised you didn't mention the Banana Blossom when you were talking about the Ackee. My first experience with Banana Blossom was when I saw it in the supermarket and was feeling adventurous. So I grabbed it, diced it up and put it in a stirfry (we're chinese). It was absolutely god-awful horrible. Like we couldn't even swallow. Turns out, we didn't get rid of something on the inside that was extremely bitter and inedible. But we didn't know that. But then you guys did the Vegan Fish and Chips thing, and this time we made a point to buy the canned, ready to cook version. This time, I trust the canning company to have taken out the inedible parts so I don't end up licking satan's asshole again.

This is one of my favorite things to do, when not staying home as much as possible to avoid the plague. It's how I first had sweet jackfruit, lotus stalks, white gourd juice, pennywort tea, Rooh Afza cordial, Chinese pickled sausages, green bean porridge, quail eggs, jocote fruit, chayote squash, cashewfruit juice, and innumerable other things. I do this on a rather small budget too...mainly because I really like some very healthy and cheap staples like beans, lentils, millet, rice, potatoes, and hominy. So, I can subsidize my adventure by having beans and rice for a few meals...at a total cost of like, $1.50 for three meals, then have a more expensive meal on another day with the money saved by eating cheap staples.

I do that all the time (sans pandemic): go to the local Asian supermarket with my phone out, pick up cans and ingredients I’ve never heard of, look them up and try new things. I get something new every time I go, and end up with a winner about 80% of the time! A lot of time, the ingredients make it into my regular rotation.

I've discovered a great many wonderful things doing that, especially in the fresh fruits and vegetables. We learned we absolutely love Rutabaga, and that Turnips are the devil's poop. The dragonfruit we can get here is obviously picked so very unripe as to have essentially no flavor; mangos aren't much better--though I've had them fresh and amazing in SEA.

You MUST have ripe (yellow) jackfruit! Either canned or fresh; it's found in lots of Asian markets in the UK, and it's wonderful plain or in desserts!

Yes! My local Chinese supermarket has an aisle we like to call the "healthy desserts department", full of tinned fruits like jackfruit, rambutan, dragonfruit, lychee, mangosteen, etc. All things that are really expensive and generally poor quality when bought fresh in the UK, but canned in juice or syrup. Cheaper and consistent quality, and a really great way to try out more "exotic" fruits.

So I'm Jamaican and i was very happy to see u guys showcase two if Jamaica's favorite foods in this episode as for how they where used I understand that it's from a can but if you ever get the chance to have fresh jackfruit or ackee it's is awesome also we only eat a specific part of the jackfruit and the seeds are great when roasted as for ackee it's not hard to clean or prepare an it's ackee and saltfish not the other way around 🤗🇯🇲🇯🇲 you guys should try corned beef in a can from Jamaica that would be great

7:55 ok Mike, at this moment I'm an Indonesian it's my obligations to let you know a dish that celebrate jackfruit, specifically young jackfruit (the one you had in this video), called gudeg, it's a stew from a Jogja, a region in central Java Indonesia. The stew consist of young jackfruit, coconut milk, tofu and lots of stuff put over a steaming rice. You can make it vegan if you want and honestly you won't miss a thing, the thing that make gudeg special and delicious is the young jackfruit and the taste is sweet and salty, you definitely should try it with that tin young jackfruit

We also use jackfruit a lot in India. You can make great Sabji (dry curried vegetable or with gravy) with it, to be had with roti (flatbread) or you can even use it in a Biryani and it tastes amazing!

Tin food to try: Chakalaka. It’s a South African must have. We usually eat it on Pap. Pronounce the a with a U sound. Like cup. Pap is: Cooked maize meal (the white one) the pap should be cooked slightly on the stiffer side. Not soft like a porridge. Heat up the Chakalaka. Dish up a serving of pap and add as much of the Chakalaka as you like on top of your pap.

I've had jackfruit in a BBQ sandwich before. Tastes just like pulled pork in BBQ sauce. My hubby couldn't tell the difference between pulled pork and pulled jackfruit in sauce. It was absolutely lovely. I wish it wasn't so expensive here in my part of the world as I'd cook with it more often.

Long story, but as a teen I was a hobo for 6-8 months. That tomato mackerel was very popular among the hobo community in the US. Cheap, easy to prepare and tasty. We would usually cook it with eggs and eat on tortillas.

The potatoes one is if when it's grown, and the soil is not enough, and it gets exposed to sun (and turns green), it will create a toxin. Nothing to do with ripeness or preparation.

Potatoes is a real awful example you have to actively try to get a potato to be toxic. If yoi harvest and eat it normally you will never have to deal with any such thing I mean if you eat a green potato its kind of your fault at that point.

That second one is why I am only like 80% okay with them thinking about the prices. That pork came in a pre-made barbecue sauce as well, which no one seemed to pay any attention to. "Forget this, pay double that and you get twice as much fresh pork shoulder." Yeah, I hear you on that. But then you'd also have to pay for all the other ingredients for the BBQ sauce and make your own BBQ sauce on top of cooking the damn pork shoulder. That is so much more work and demeans the true value you're getting from that tinned pulled pork.

And there's also the point that not everyone has a backyard to put a flipping smoker in to cook the pork. And especially when you're living alone, you're either have to cook a smaller piece of pork (which obviously won't come out as nice), eat nothing but pulled pork for the rest of the week, or have ample freezer space for it. So yeah, just for myself I'd rather get an appropriately sized pack/tin of pulled pork from the local supermarket.

Not to mention that double amount of pork is going to cook down to be much less than double. And making a verdict on ready-made pulled pork on that one brand is pretty harsh, too. Nothing ready-made from the store is ever as good as something that's expertly done, but it is always much cheaper, and usually much better than what I'm equipped to make myself.

Tinned food from the Philippines: Sardines (in tomato sauce)! Most popular brand is Ligo Sardines - £0.30 here in PH . Yes, sardines might seem fishy, but the tomato sauce basically neglected that. It is a staple food especially at poorer areas of our country (poor of poor basically), but worry not, that is delicious (you can eat it straight from the can), and also this showcase the Filipinos' creativity in having different dishes from such a humble food like tinned sardines. Because of the mass production of these kind of foods here, you might also see and appreciate a different purpose of tinned food. Apologies for my english.

@@totsbig Sardines in tomato sauce is not original to the Philippines lol. It's basic European food. And it's cheap because the fish used are small. Fresh sardines of usable size is quite expensive, compared to other fish you find locally.

In Norway, tinned mackerel in tomato sauce is very popular, so I am not surprised to hear similar things from other countries. I just eat it on a slice of rye bread, and it is fucking delicious.

i really love when you guys point out that a food that is used as a meat alternative doesn't hold up to what we expect nutritionally from specific foods - i'm coming up for a decade of being vegan and to this day it's still my biggest beef (ha) with a lot of vegan foods, both marketed replacements (coconut oil based cheeses i'm lookin at u) and dishes/recipes, like the jackfruit. it's important to be aware of those discrepancies, so we're able to account for it and make up for that lost protein/iron/etc elsewhere in another ingredient, another meal, and people not realising that they need to do that is in my experience why so many ppl struggle with things like energy levels when they try to go veggie.

Oh you definitely need to try out a Bruneian south east asian dish called "Ambuyat". It is the literal imitation of eating glue on a stick. Primarily eaten as a starch component on the table, I'd be interested how you would "sort" it out. Extra tip: Works well with spicy condiments/sauce i.e chili +lime +soy sauce, mixed in a small saucer.

Ackee and saltfish is in my top 10. Great meal. I like going to Polish food shops and buying a jar of...Something and making up dinner based on what comes out. Once it was a jar of chicken drumsticks, I was quite surprised, the label and looking through the glass gave nothing away!!

As someone who grew up in a household in England with Jamaican heritage, I got so excited when I saw ackee and cheered when Ben brought out the saltfish and ackee. When I was in secondary school and did food technology in my first year, we had an end of year 'cook-off' where we could cook anything we wanted in 2hrs so long as we knew how to make it. Of course, I made saltfish and ackee and my classmates *loved* it. Half of them had no idea what it was nor that it was Jamaican (I'm not the sort of person you see and think 'Jamaican' immediately) but I still won joint second place! (My best friend won with her sushi dish which we both still joke about today) But I think this really shows how just exposing kids to dishes they've never seen or heard of before makes them realise how good other country's food is and educates their palates :))

This international exploration via tinned foods is my lifestyle. I have discovered an importer in the Pittsburgh area that supplies the area from Philadelphia to Chicago. He has a store that covers so many countries and it is spectacular for exploring. I was able to make true beans on toast because he imports your Heinz beans and sells them just a few miles away from Heinz headquarters in Pittsburgh. But he has the jackfruit and so much more as well. I have also discovered the joy of jars there. I have pickled young grapes, peanut butter powder with chilies (Ghana), and so much more waiting for me to use them at my leisure. Thanks for today's recipes. They will help me a lot.

In Louisiana we use canned red beans and white beans to speed things up. Add a bit of chicken broth (depending on how thick you want your beans), brown some sausage (for the red beans) or brown some salt pork (for the white beans), saute the trinity (onion, celery, bell pepper), and season with salt/pepper to taste. Then serve over rice. Blue Runner is my preferred brand but not sure if it can be found outside of Louisiana.

Ripe jackfruit is incredible. Honey sweetness with a complex, almost floral fragrance. Green jackfruit is as different from ripe jackfruit as a young mango (used in som tum mamuang, for example) is from a plump, juicy, golden one (mango sticky rice). As for what canned goods to try next, I suggest Chinese fermented bean curd, sometimes sold as red bean curd. You can use it to marinate meat, stir-fry vegetables or just as is, as an accompaniment to plain congee.

The unripped jack fruit in a can is convenient cos where we are its rare to get a whole fresh fruit. I use it in a lot in coconut based dishes, south east asian curries, stews, stir dishes... as an added veg, goes with banana blossom (also mostly bought in a can unless you’re in tropical climates).
