A quick google search on American sites seems to show them putting Oats in a Midwestern style Meatloaf, they never said where their influences were for each recipe. Meatloaf is made differently from family to family, I would doubt neighbours make it the same way. Burger is a burger is a burger, not much you can really say and a (texan) chilli as you can see from like every other comment is different, I’ve seen some people say it has to be with stewing meat, then someone else claiming to be from Texas says it is with ground meat. That’s the thing “American” style food is literally styles of other cuisines. That’s the beauty of the US the food is different from place to place depending on many factors such as where the locals originally came from. Just because what they made here isn’t what you’re used to in your part of the states doesn’t mean someone else thinks this is fairly similar.

That means it IS authentic though. The quintessential part of American cuisine is that nothing is stuck in place, it's always changing, evolving - the old recipes stick around for a while but new ones always come along and replace them. You want meat with bread crumbs and ketchup on top? Until the 1820s, ketchup didn't even have tomatoes, and until 100 years ago it didn't have sugar either. But the recipe evolved and now you use it on meatloaf like a heathen.

Oddly it's quite common to hear ketchup referred to as "tomato sauce" by people in the UK, even though they do understand what actual tomato sauce is and what it's used are. I don't think they tend to use ketchup very much and they probably only call it "tomato sauce" because they often use the word "sauce" for various condiments that we don't really think of as sauce here. If you think about it we do tend to be rather oddly specific about what things we consider sauce here.

I’m a Texan, and saltines are actually a staple companion to chili. Also, a dollop of sour cream on top helps dampen the heat, and some shredded cheddar cheese and scallions or diced onions are also typical toppings. Chili is an art form, and I really think that Jamie did a phenomenal job of capturing the essence of my home state’s signature dish.

I'm a Texan and would like to tell Jamie that he definitely got the "No Beans!" part correct, but chili is not supposed to be that dry. It's GOT to have a thick-ish liquid base, served family style in a big pot, and you sop it up with either saltines or cornbread! I also agree with @Azryhael that you need shredded/grated cheddar cheese and a dollop of sour cream to top it off with. A lot of people add diced onions on top, too.

As a Real Texan I can say everyone who’s says authentic Texas chili doesn’t have beans is mental and has only had canned “chili” in Texas(not really knocking wolf brand but it ain’t real chili by itself), also the cheese and sour cream is also used on the canned stuff. Rarely on authentic unless you’re going hard on peppers. Cubed chuck, diced green chilies, Red onions and scallions definitely the good ole way to go but the radishes definitely sounds like a complimentary ingredient.

@@calebharris7568 bread crumbs, 70/30 beef, egg, onion diced, garlic powder, all season, woresishire sauce, combine. Put in a Bread loaf pan bake at 375 for 45 to 50 min on until crusty on top. Drain fat coat top with the cheapest ketchup ou can find put back in oven for 10 to 15 min or until ketchup forms crust. Alternative instead of ketchup is a mushroom soup cream sauce made with Campbell's soup and cream or milk. That's American meat loaf.

Its always interesting to see how folks from other countries make food from your country. This must be what my friend Lorena (who is Mexican) felt when I told her I actually prefer crunchy tacos. lol I've lived in 6 states (southern, west coast, midwest, and east coast) and I have never eaten meatloaf made this way. In my meatloaf I use grade a beef, salt, pepper and paprika as spices mix it up and encase mozzarella cheese within the meatloaf before wrapping it in bacon and slow cock it in the oven at 170 degrees Celsius (338 degrees Fahrenheit) with a meat thermometer to 70 degrees (158 degrees Fahrenheit). Serve it up with a mushroom sauce, boiled potatoes and some classic Swedish lingon Berry jam.

meatloaf is one of those meals that will ALWAYS ALWAYS be different depending on the family, i know people that have sausage in theirs others have peppers, others use corn flakes, some with stale bread, my mom would use ground beef Worcestershire Sauce onions crackers spices and then near the end topped with a ketchup and Worcestershire Sauce mixture.

What your mom does is a variation on the basic meatloaf. Those other people aren't making a classic Meatloaf. Crackers, Breadcrumbs, cornbread all can be used. Most people use breadcrumbs tho. It's about what's cheap and easy to make.

I've lived in Houston, Texas my whole life and we DO eat our Chili with NO BEANS and saltine crackers but sometimes we eat it over Fritos with cheese and onions on top! (We call it a Frito pie! SO YUMMY!! ) You hit the nail on the head with the Chili Jaime!!! Rock on!!!!

As an American - I believe that all 3 fellows did fairly well - but the Burger was clearly the most accurate. The meatloaf went off the tilt with the pecans and marmalade mixed in (that is NOT in any classic meatloaf recipe), and the Chili was made contentious when it was defined as bean-free Texas Chili - which is TRUE, but alienating to the rest of the chili-making Country. (I DO love Texas Chili though, and the meatloaf DID sound and look spectacular. Good work!

I don’t know much, but I do know a thing or two about “traditional” Texas chili. Jamie gets props for understanding that the traditional recipe does not contain beans. He is likewise right about crafting one’s own blend of dried chiles and that the red color comes from them and not tomatoes! So far, so good. But I’m left wondering how he thickened it? There is leeway here, but many of us chili lovers prefer to use Masa; that corn (maize) flour treated with lime and used to make tortillas. Without this, I always feel like something is missing.

It can be a SORTEDfood meatloaf but its definitely not an American meatloaf. The only one I can vote for being an American food in a American food challenge is the burger. The hamburger saltine "nacho" dip could be a Texan chili but idk if that is something a Texan would make not from there.

That's a good point. Chili and meatloaf are not considered great American classics where I'm from though. So that's were I'm coming from. They're just a dish. I would put them in a similar category as buffalo wings. I'm from the buffalo area and we get really excited about wings but people else where aren't necessarily going to get excited about wings. I don't know if that makes much sense but there's a whole lot more I could say. I love talking about food and sometime I get carried away.

You say not to judge you but you are making in your own words "the ultimate American dishes" then use very unamerican ingredients in every one of the dishes and ask Americans not to judge you. That would be like me making fish and chips but instead of using fried fish I use boiled shrimp ( and just an FYI for all British, Irish and Scott's shrimp and prawns are not the same animals, they are similar but different species) and instead of chips I use onion rings. It's a dish with somewhat similar ingedients but fish and chips it isn't. And if you would put rice with chili I can promise you every American that watched would have been wtf are you doing. No one eats chili with rice in America. In Cincinnati they eat it with spaghetti but never ever even heard of it being served with rice.
