@ryanhody stick to prescribing bleach enemas. The cholesterol tests predate the 60's. You should know it is more of an interaction with sugar and oils than the actual oils. Then if you were to do your due diligence you would know animal fat oils actually improve heart health. The problems are if you have a diet high in sugar and low on activity. That is how many diets work in the short term but fail long term. People at the start of a diet are more active in their activity and as that activity slows so does the effectiveness of whatever the diet of the month is.

As an American from texas, and a significant lover of eggs (especially scrambled) I usually make my scramble starting over high heat then turning it to the lowest setting constantly stirring. Creating a large amount of steam initially to fluff the eggs that hit the pan first. Then coating them in the remaining uncooked eggs almost making a custard coating. I then add some salsa, or hot sauce. (Very frequently siracha) and let some cheese melt over the top on the transfer from pan to plate. And then plate to table. (Sometimes topping or even cooking in Jimmy Dean sausage. Or some good ol fashin bacon.

I have been living in the States for many years, so that while I grew up on the English style, I am most used to the American style. I would omit the peppers, since I happen to loathe the taste (and even more, the smell) of capiscum peppers. I cook the onions so that they are caramelized, which takes at least half an hour to do properly. The American mystery writer, Rex Stout, has his gourmet detective, Nero Wolfe, cook scrambled eggs in the French style, taking about 20 minutes. While I am quite prepared to spend half an hour to 45 minutes to caramelize onions, I think that 20 minutes is too long for cooking the eggs. Julia Child, writing of her training at the Cordon Bleu cooking school from Chef Max Bugnard in the book My Life in France, tells this story: Chef Bugnard cracked two eggs and added a dash of salt and pepper. “Like this,” he said, gently blending the yolks and whites together with a fork. “Not too much.” He smeared the bottom and sides of a frying pan with butter, then gently poured the eggs in. Keeping the heat low, he stared intently at the pan. Nothing happened. After a long three minutes, the eggs began to thicken into a custard. Stirring rapidly with the fork, sliding the pan off and on the burner, Bugnard gently pulled the egg curds together-“Keep them a little bit loose; this is very important,” he instructed. “Now the cream or butter,” he said, looking at me with raised eyebrows. “This will stop the cooking, you see?” I nodded, and he turned the scrambled eggs out onto a plate, sprinkled bits of parsley around, and said, “Voilà!” It was a remarkable lesson. No dish, not even the humble scrambled egg, was too much trouble for him. “You never forget a beautiful thing that you have made,” he said. “Even after you eat it, it stays with you-always.”

With red pepper and onions, it's almost more like a Denver omelet rather than scrambled eggs. Defining "American-style" scrambled eggs, however, will be difficult, as there's maybe a dozen different regional styles. I guess the most popular would be the Dennys or IHOP style, which is just eggs and butter (maybe cheddar cheese as well), with bacon, sausage, and hashbrowns in the side.

Hi Sorted Food. Love the videos, thanks for making them! I’m curious about the way you film the episodes- were the scrambled eggs cold by the time you review them and does this change the flavour? Sorry if this has been asked before, I’m a new fan! Keep up the great work! *off to make scrambled eggs*

I make our scrambled eggs as a combination of English and American styles. Only for veg, I use what we have available as leftovers from previous meals. For example, if I have some onion, then yes, if I have pepper, always. Yet if I have celery, I will use that. Instead of bacon, usually I will use ham as I find that cheaper where I live. Thank you for another great video.
@angrystickfig5 жыл бұрын
"If you merged these two you'd have my ideal breakfast." That's how most folks I know do eggs here in the US. Personally I do mine different: Beat eggs with milk and poor into a very buttery frying pan. Let that sit until you see the bottom is cooked through, then break it up into curds and mix all that butter in and let the residual heat cook the rest of the egg.
@ultimateplayer095 жыл бұрын
Also that was way too much onion and pepper
@geistdraco84375 жыл бұрын
No milk; occasionally cheese, onions, and maybe some hot sauce( I prefer something with more flavor than heat as I'm likely to put some on top.). Mix cheese AND hot sauce into eggs after you've whisked them in a bowl or measuring cup. Follow standard scrambled eggs steps, and maybe if you're feeling fancy, use the side of your hand to tap the end of the handle close to the pan ( grip covered) to add a bit of air and bounce.

In New Zealand we employ the "low and slow method of scrambled eggs cooking: - mix eggs with a splash of full cream milk, salt, pepper, and either a pinch of dried mixed herbs Or chopped fresh parsley Or dill. Add to saucepan on medium-low heat (some people pre-oil their pots with butter or canola oil, some don't), and stir continually until the mixture starts bubbling or it is at the consistency you like. Spoon over a couple of buttered pieces of toast and enjoy!

The QUINTESSENTIAL American scrambled eggs are cracked into a bowl, whisked with a fork for a few seconds, poured into a pan with butter or bacon grease, and fully cooked without being dried out. I know it sounds too simple, but that last bit is really a trick. Also, seasoning is usually left to the individual at the table. Toast is on the side, and there is ALWAYS toast; even when you don't want toast. THAT SAID: Mike's eggs would totally appear on menus all over the US and I'd be happy to eat them. They might not be quintessential, but you've definitely hit the American mark this time. ^-^ Note: streaky bacon does not need to be fried in oil, it can go straight into the pan, but since you only made 4 half slices I'm going to assume you needed the added volume.

Hello, I'm Greece. It was really interesting to see this video. My country's version of scrambled eggs is actually closer to the American version. The way my dad makes it, is by softening his diced onion and some garlic on a pan with some olive oil, peppers too sometimes, and then he adds diced tomatoes (not tomato juice) in the pan to cook them off for a while to a sauce-like consistency. As for herbs, he puts some parsley and peppermint to infuse in the tomato sauce, and seasons them with salt and pepper. Finally he puts in the eggs and cooks them until just chunky, and traditionally, a bit of cured meat is put in at the end, alongside the eggs. Personally I find it's very nice to saute it at the very beginning, have it release its fat, and then take the bites out and add them back in at the end. This version of scrambled eggs is called kayanas, and it is a full dish. Though I love my creamy, buttery scrambled eggs, this is a summer favorite, and full of flavor.

American scrambled eggs: Lightly beat in a bowl with a fork. Put in pan. Mix it around a bit. Put on plate. Some people just crack the eggs in the pan and mix them a bit there. Some mix in some cheese, some add sour cream, some add mayo. We really don't put a lot of effort in them lol.
