I don't get it: the letter " г" has a G sound or a V sound? It always changes, I can never now, so I'm struggling to pronounce a new word whenever I'm trying to. Would someone please help me out?

This is just a rule you must get used to I suppose. Generally it's a 'G' sound, but sometimes when surrounded by two vowels, it makes a V sound e.g. "сегодня", and so on

But "много" is a 'G' sound

Yeah, it's an irregular rule I honestly just forgot about it until I naturally learnt when to say 'G' or 'V', because you have learn it of by heart. There's far more important grammar in Russian to spend your time on anyways

There are no rules for that. It is more convenient to pronounce some words not in the way they are written, it happened historically. It is not only with letter г. For example we always write что [chto] but pronounce што [shto]. If you get confused so just spell г=g all the time. But if you want to pronounce correctly from the very beginning you need to remember those words
