This is my first time making sourdough brioche , I have made other brioche recipes before. But this is by far the best brioche recipe I have ever made , my family agrees. I’m so glad I made 2 batches of this. I am definitely making this recipe again it’s light fluffy, buttery and tasty.

I made this (and used a kitchen aid to mix as I’m a bit lazy) and woah!! I have brioche!!! And I used APF to save my bread flour for your sourdough recipe that I make 3 times a week. Thank you Grant, you have been instrumental in helping me kickstart my sourdough journey !

Dying to try this brioche recipe. Intrigued if a stand mixer can be used for the kneading stage? (although it looks like you'd get better results by hand)

I made this over the weekend. It tasted good but it did not come out as soft as yours look. On the dense side for sure. This has always been my hurdle with Brioche in general even when using store bought yeast. Your recipe was really easy to follow. My dough rose/doubled in both proof times. Can you tell me roughly what you think happened? I know that’s a question you may not be able to answer.

The only things I can think of to make it softer/fluffier are the following: 1.) Make sure there is really good gluten development in the dough before you start adding the butter. So you may want to knead even longer before adding the butter to get the dough to pass the "window pane test" before butter is added. 2.) Let the dough bulk ferment and final proof even longer, pushing the fermentation time even further. I'm not sure what exactly happened in your case, but these are the two things I would try if I were you.

Yes! Just divide the dough into 10 or 12 pieces and shape them into balls. You can proof them and bake them just like any burger buns 👍🏼

Thank you for the instruction!... The eggs gave me a 30 grams more ...egg... I pushed forward with the recipie and the dough slwas so sticky....sooooo sticky... the butter went into the dough no problem but even after 10 min of kneading it was sticking to the counter so badly....so what happens when the fresh eggs are more .. take out milk or add flour?

Hello.. what is the temperature your your bulk fermentation? With that length of time that you recommended on the video, my brioche would be sour. I bulk it at 28C.

Mine is probably around 21C. You can go longer or shorter depending on how long it takes your dough to rise. Everything should move more quickly at 28°C.

Yes you can! But, the lower protein might make it harder to develop gluten in some of the breads. Keep that in mind. That's why I prefer bread flour when I can find it.

Hi Grant, I made this bread but my husband (who absolutely detests the sourdough taste), said it tasted very salty. Could I minimize the salt addition? And add more sugar maybe?

Yes, absolutely! I'm surprised it tasted too salty, but you could lower the salt to 7-8 grams if you want to, and use unsalted butter. That should still make good bread but contain less salt.

So you proof the dough twice, but how does it not become overproofed? I mean, when you use normal yeast, it creates gases but not much acidity, whereas with a sourdough starter, especially a liquid one, it's very easy to destroy the gluten structure. Also, how did the second rise happen so much faster? Is it because the quantity of bacteria had already multiplied during the first rise? And if that's the case, how come the acidic bacteria didn't multiply as well?
