I made these and were absolutely delicious. Best ciabatta I’ve eaten. We enjoyed them with some smoked cheese, chicken and pesto.

Ohhh this is a wet one.... I make Sourdough every week, but mine is only about 75% hydration...... Either I measured wrong or this is SUPER wet LOL.... I've got it in the fridge to bulk tonight....can't wait till tomorrow to bake them~!! Hi! Do you do. Stretch and fold every 30 minutes for three hours? S&F 6 times in 3 hours?

Did you try this? I know I prefer to mix and let rise but the stretch and folds take me less than 30 seconds and that’s with washing my hands after

Mhh didn't get good results at all... I get amazing results making breads at 70% hydration so I thought I was ready for a ciabatta recipe... but it was a disaster and I wanted to know why. First of all, when you calculate the ratio of hydration with the water and flour it comes to 83.5% just with those two things, but with the addition of 30 ml of oil and 150 gr of leaven it became a wet mess right away. It didn't look like her dough at all. I used a scale so I don't think I made a mistake. I used bread flour and my leaven was really active when I put it in... Could the oil be too much?
