Unfortunately, I'm on a gluten-free diet and I'm hoping one of these days you will make something gluten-free that I can make for me. I use flour grown from sunriseflourmill. Organic and grown using heritage berries and easier to digest for those who have gluten issues.

Powdered buttermilk would be amazing! My daughter also substituted the water for milk and left out the powdered milk and they turned out great!

My daughter tested out using milk instead of water and leaving out the powdered milk, and hers turned out perfect! So yes!

You could freeze the dough right after you shape them before they proof.

I'd try a small batch cooked and frozen, i don't see any reason u couldnt thaw and heat, up in 325 oven 5 or 6 minutes. I don't understand why It needs to freeze uncooked.
