I've tried your recipe and method for making a successful baguettes. My only problem is I can't keep the bough from sticking to the cloth. But, it's fantastic. Thank you for sharing your knowledge and experience.

Can I bake this in a dutch oven like an artisan sourdough bread using the same procedures above or should I proof for 4 hours before putting in fridge and then baking in dutch oven the next day? I tried your panettone recipe and it was divine!!! Worth all the work and wait that it required. Thank you so much for all your sourdough videos! Great recipes and easy to follow.

I'm a big fan of the rubaud method and/or slap and fold in the early stages of the dough (usually when I do bassinage) because IMO it's the best thing to build dough strength. Can you tell me why you prefer stretching and folding in the early stages? Is it just because it's more gentle on the gluten? Do you ever do lamination?

Yes it is more gentle on the gluten, Sometimes I do lamination but only for batards or boules, you can also try it on baguettes

Si se puede poner en la charola normal, si es diferente ya que la placa de acero para pizza está muy caliente y ayuda a que el pan crezca un poco más pero si se puede también hacer en charola normal
