Your approach to sourdough reminds me that we women have been making bread this way for a long time, before scales and timers! There doesn’t need to be a lot of fuss and precision to get all the benefits of long fermented grains, or to make delcious food for our families. I agree. I used to measure out every little thing I baked. Over time I got tired of washing a bunch of little measuring spoons and stuff plus always having a busy toddler or a baby in my arms, I just need to hurry sometimes. I can eyeball most things. I mean, if I'm making a cake I'll measure out flour but overall I've gotten lazy about it and trust my judgement on things I've made 1000 times. It's always good (maybe even better than before). When I watch people pull out a digital scale and start measuring in grams, I just know I'm never using that recipe. That's the one thing that's held me back from soap making. It seems very precise.

Well I at last found someone who makes pizza crust out of discarded sourdough!! I just gâté wasting discarded sourdough!! I will surely watch your videos about different recipes.. true that now that almost everything is getting high priced we need to be careful not wasting what can be saved ! Thank you very much for giving us ideas about how to use sourdough !! That is very interesting!! And quickly done!! And another thing that am certain you thought of the dried sourdough that is around your big jar you can scoop it up put it aside and when verrry dry save it in another jar so when by accident you don’t have enough sourdough you can make some more by feeding it with some water and flour.. it will come alive even with a dab of your dried sourdough. when your starter is mature, it can be kept in da fridge. A jar can be stored in the fridge for months without needing to be fed. I only feed my starter, before I plan to bake. Like ill pull her out the fridge the night before and give her a feeding. She's good to go in the morning. I've fed her what ill need that next day, take what i need, put her back in the fridge until next time. No waist.

This was such a helpful video. After watching you, I started my own starter and have kept it happy for quite awhile. Our grandchildren rave about the breads that I have made, and our youngest was recently quite disappointed to find that I was not making the cinnamon rolls for breakfast, while they were here visiting. I am 74 and living proof that you can teach an old dog new tricks! 😍❤️😍

I use my 6” mini cast iron and make a bunch of mini pizza crusts. I get them all filled up with yummy toppings and then freeze them. We throw them in the air fryer for super easy dinner or lunches. Such an easy meal prep idea and my kids love prepping with me. They get exactly what toppings they want and there’s less arguing. Thanks for the inspiration 😊

Exactly what I was thinking of watching this video. But our family tradition of Naedla is a drop dumpling, (you spoon it into your simmering chicken soup) so a wetter dough with a lot of eggs in it. I may try some discrad dumplings!!

I keep about 150 grams of starter in a jar in the fridge. When I make bread I take it out feed it the amount I will need for my bread in the same jar while keeping 150 grams in the jar. I let the starter rise in the jar than pour into my flour to make bread. I then place that jar back in the fridge with 150 grams remaining where I do the same when I need to bake bread again. No waste this way.

I use them all the time and we absolutely LOVE IT! My grandkids always look at the amount of sourdough starter or discard in my jars and want one of the recipes when they come over. I keep just a tiny bit of starter, about 50g only, then just feed it for my sourdough and stick it straight back in the fridge. No discard. But it does mean I sometimes have to feed it up loads to make recipes like this! I had to make a whole load to make your sourdough pizza crusts, they worked perfectly though. It's making me hungry watching this, I have a couple of fresh loaves from today and some homemade apple butter I may have to go and indulge!

I recently learned that you can feed starter to chckens (it is just flour water and probiotic enzymes). I stir starter into whatever scraps I will be feeding them along with some crumbles or scratch grain so that it isn't sticky. My chickens like it, and it has straightened out the digestion of an old hen.

Thank you, I learned how to make sour dough starter, and sour dough bread from your videos. Thanks for the simple explanations of doing this. I took some of my discarded starter and made, Zucchini cookies with zucchini from the garden, I cut back on the butter called for in the recipe and added discard, 60% cacao Cho. chips, raisins, and chopped walnuts. I accidently grabbed the cumin instead of the cinnamon, I caught myself, but a little cumin went in, no problem, tasted great. They were fantastic. My next journey sour dough starter from potato water like my grandpa did. He was a sheepherder when he was young. It made the best pancakes.

Hi Cheryl. I too am gluten sensitive and find anything homemade with sourdough does not bother me. And I use all purpose or bread flour without any issue. I do have Einkorn and have used it for years. Just haven't needed to use it with sourdough recipes. Once a month I feed my starter with either whole wheat or Rye flour, which makes it very very happy.

I was the same. the first few times I had my starter, I threw away a lot of discard. for about 3 years now I haven't thrown any away. I use my starter for Peking duck pancakes. I just put 1/4 cup straight into a pan and sprinkle with salt. Cool until soft and still pliable. Delicious!

I do a amish friendship starter it's fed every 5 days 1 cup flour 1 cup milk 1 cup sugar. It makes really good waffles, breads cakes muffins pancakes I'm thinking it may make a good cinnamon roll dough as well. I don't put it in the refrigerator I keep it covered with a kitchen towel on my counter. I was told that it would draw yeast from the air and it would help to keep my starter bubbling and active and it has worked nicely. It's a very airy active starter.

My time following your sourdough videos and trying these recipes and just learning more about the foods I am cooking has been wonderful because it has taken away some type of fear that was put into me as a kid of things making you ill if they didn’t turn out well. Granted I have had a few things that we didn’t eat more than a bite, but everything else has been fine. If something is over done, it becomes a cracker or chip or just crunchy snack.

I love all these sourdough vedios. They are so helpful. I just pulled my sourdough starter out from the fridge and I had not fed it since the beginning of summer because we were away. Now we r back and I just mixed the top liquid back into the starter and fed it a few day's. Now it's ready to bake with again. So crazy to me how resilient a starter can be.

You can also just keep a little bit of starter (like 25 gr) and feed it however much you need for your recipes. :) Take that much out for your recipes and...you're done! Back into the fridge. No more discards.

Great ideas to use sourdough starter … but honestly I’m not sure where the discard practice come from. I have 0 discard. I just use only a portion of the starter for cooking and the rest refresh to keep my starter available. Never wasted a gram of flour and water beside the first 10 days since I produced my starter from scratch 10 years ago. Happy cooking 😊

I needed this so bad!!! I was soooo confued on why I would need discard and all the videos I watch are only ever about discard from creating a new starter or just discard recipes. I finally understand why I'd have discard with my mature starter (I got from someone). Now I can boost my starter, keep it healthier, and make discard recipes! THANK YOU SO MUCH!!

I’ve been working on sourdough bread since since Christmas 23 and I have made it with used in. It comes out great in my bread machine. If I use my sourdough starter it comes out like a brick.

if you have a dense loaf it usually means your starter is weak...you can strengthen it by double feeding a few days or feeding it some rye flour...also make sure you are using unbleached flour

I have never done the discard method. I've been baking sourdough for years with my starter 🙂 I could never find a reasonable reason for the discard. When you use expensive flour it just didn't make sense to throw it out. My starter never failed. Love your channel!!!!!
