I'm curious why you don't roll your English Muffins with your sheeter? Seems like it would take a lot less time and render a much more uniform product, even if you had to do it in two batches.

Probably because of how sticky they are and how much flour they need? They've mentioned before about needing a thick bed of flour on the board and flour sprinkled on the dough. My guess is the machine would be a huge mess and required lots of annoying cleanup if it was used, or it's not possible to work such a wet and sticky dough in the first place.

I would try putting down some dowel rods for rolling pin to ride on. If your trying to get to a 3/4 inch thickness then a 3\4 dowel would do the job.

We have two rolling pins, both about two inches in diameter, full length, with no handles. Our fave is solid red oak, the other is maple but lacks the heft and gets used less because of it.

Ever tried using a rolling pin with ball bearings? You can really put your weight on it, when the handles are separated from the roller.

Add a pinch of instant yeast. I only make yeast muffins. Haven’t tried SD, yet. Some things I prefer to use yeast, not SD.
