Hi Sweet Friends, Today I am sharing an easy one pan dish called a Sourdough Skillet. It's a great way to use up discarded sourdough starter...plus you can throw anything you want into your skillet which also makes this a great clean out the crisper meal! Love, Mary

Hello, Mary, I'm back! Always searching for more ways to use my sourdough "discard," and you have some great solutions! You know the thing I like best about your recipes? Your exacting listing of ingredients: "Oh, some of this, or some of that--or whatever you have and like"; and your precise measurements: "Oh, about this much, or maybe more, or maybe less, or whatever you think is right." Now THAT's MY way of cooking! Thanks for this recipe, and thanks for your channel. Seems last time, I managed to overlook that big red button, so I took care of that little detail while I was here. I'm sure I'll see you again.

Made this for my husband last night, I added salsa, used a ground beef/veal/pork meat combo & grated two cheeses on top-Monterey Jack & Colby. I was a bit worried that my sourdough starter is rye, but it still turned out delicious! We loved it so much!!! My husband almost ate the entire pan!!! THANK YOU SO MUCH FOR SHARING THIS RECIPE!!! I also love Lisa’s Farmhouse on Boone channel & will check her version out as well. ❤️🙂

There is an absence of wise matriarchs in our society. My mother and grandmother's have lost all of these skills and wisdom. I'm trying my hardest to learn them all so I can teach my children. My life goal is to be a wise matriarch full of wisdom and knowledge and useful skills that generations that come after will pass on. Thank you Mary for teaching me so much❤

It is mostly because of the womens lib racket They were brainwashed to believe that working outside the house was liberating. Children grew up without mothers and the state got more taxes.

I tried this tonight and it was great and made more than I expected which was good as I had put it off as I was afraid it wouldn’t make enough for my family. Well, it was mostly great. I misread the directions and put 1 tablespoon of baking soda in instead of 1 teaspoon! Oh dear! The crust was about inedible but you could tell it *could* be good if Mother would read the directions better! I look forward to trying it again soon. It made a pound of ground beef go a very respectable distance.

You have a good distinction between baking powder & baking soda here, needed that information today. Have been making a sourdough skillet similar to yours but smaller, for lunches. I just pump up my overnight starter in the morning with a few tablespoons of new flour ( 2 rye, 2 white nutri- flour) let it work til about 1 pm.& away I go. I want to graduate to muffins soon but this is where I am now.

Mary-that was so simple and lovely.. Reminded me of a shepherds pie. would be great during end of garden season when you have a little of this and a little of that.. Sourdough and cast iron are made for each other. :) My hubby came home one day with a huge grin on his face and handed me a book he got at the thrift store.. (after we moved from Alaska, but knew it would be dear to me) It was Alaska Sourdough by Ruth Allman. I think you would like that book. It is all hand written in her writing. Thanks for your video-enjoyed it very much.

Good morning. I just wanted to compliment you on your recipe. I am a newbie to sourdough and am now making my own sour dough starter. With all the left over mix, I went to KZbin to find a recipe for the discard. Your video was the first one I watched. And my husband and I made the recipe. It came out great!!!. I made a version of this based off your recipe tips the other night. It was so delicious and I am now adding it to my recipe book to make often. YUM! Thank you so much for the idea :) BTW, I made mine with some chicken and a skillet side dish that I had leftover that consisted of sweet potatoes and garlic scapes from my garden with fresh herbs (even my kids who don't like sweet potatoes like this---win win!) and of course I had to throw on some cheeses and Italian seasoning on the top of the bread part. :) You can never go wrong with cheese :)

Hi Mary. I just discarded my starter for the first time (my first ever sourdough starter). My question is, I only have 1 cup of discarded starter, can I add 1/2 cup of flour to make a cup and a half? Thank you for sharing your infinite knowledge and wisdom with all of us who maybe didn’t learn this type of thing when young! It’s amazing how important things like this are coming back around…they always do.

Hey Mary, I’m new to sourdough starter. I’ve made the English muffins, twice, and Lisa’s cinnamon rolls, all three were great. Do I have to discard, how much and how often? Looks great!! Will definitely make this. I was thinking that it reminded me of a pot pie. I think if we makde a cream sauce and mixed that in before the sourdough goes on top, it would be a tasty pot pie.

Maybe my eggs are just especially large because the topping came out as an omelet. A very tasty omelet though. Definitely going to make the recipe again, but with one less egg

Brooke Johnson - Oh Brooke!! Thank you SO much. I love it too!! It also has a matching salt grinder. I don’t know if they still offer it - I bought them as a set many years ago - from the Celtic Sea Salt Company which is now called the Selina Naturally Company. If the don’t carry them anymore, try poking around on amazon for light house salt and pepper shakers. I’ll look too. You’ll love the sourdough skillet dinner - it’s so versatile and tasty. Another good one, Mary! Thanks for the tip about baking soda. Good to know that it evens out the tang of the sourdough. My starter is old-actually I have two. First one from King Arthur and second one I picked up on a trip to San Francisco. Very chilly here tonight so I think this will be a great supper dish.

I'm wondering if I can use discard that isn't active? I have a "save for later" quart jar of discard that I've been pouring my discard into. It's not active. Is the baking powder & soda enough to get a nice rise? ♥Absolutely love your channel Mary! ♥

Could the cheese be put instead on top of the veggie/meat mixture in the pan before adding the dough on top? We love broccoli in our family. I have some leftover ham. I am thinking of combining cheddar with those, along with onions and garlic. Not sure what seasonings, though.

Becki Jameson - Hi Becki, I think that is a wonderful idea. You could add the cheese straight into the skillet or possibly make a cheese sauce and mix everything together and then pour on the sourdough topping. As to seasonings, cheddar cheese has such a wonderful flavor, all you might need will be salt and pepper. Keep me posted and let me know how it turns out. So happy you’re here!! Love, Mary❤️😘❤️

That’s a good question. I think salmon might overcook. But canned salmon may work OK. I’m just not really sure because I’ve never tried it. If you experiment, I would go with canned salmon since it is less expensive than fresh salmon. Keep me posted on how it turns out. Love, Mary🤗

Hi Benjamin! Oh my goodness!! That is some valuable recipe!! LOL!! I would be interested in giving it a try. But in my opinion as a home cook...what good food comes down to (and I know this sounds corny) is...was it prepared with love and served with love in a homey, cozy, and warm environment so that family and friends could come together and relax and eat in peace. That is what really makes food taste delicious!! Have you ever had an evening with friends where you ate, talked, and laughed and later that evening, or the next day, you thought...that was the best dinner ever! Even if it was just a simple home cooked meal? That's what I'm talking about. The company of good family, friends, and neighbors can make any type of food taste like it came from a $250 recipe! Thank you so much for sharing about that recipe. And...I am so happy that you are here!! Love, Mary

I love it when the recipe is listed directly on the video, and I don’t even mind it if i have to follow a link taking me directly to the recipe. I don’t see the printed recipe (including in your website). As best I can tell, it’s... 3c mixed veggies of choice, chopped meat if desired, 1-1/2c sourdough discard, 3T butter or fat of choice, melted, 3 eggs, and grated cheese, any cheese or cheese combo is okay. Yes?

I made it tonight for my family. I didn’t use the baking soda. I was able to use up a considerable amount of different veggies, so it felt like quite a nutritious meal. It was absolutely delicious. Thank you. We’ll definitely be making this again. My daughter said she didn’t think it even needed the meat. Embarrassingly, we have a surprisingly small amount of leftovers, and there should have been plenty for lunch tomorrow. Thank you again for an easy dinner the whole family enjoyed.
