Did this last night...much to everyone in the houses delight. Amazing! Don't find skin on chicken breast in the UK that much, so I did with skinless. I then wrapped it in Parma ham so could crisp that in the pan instead. I also used gruyère cheese in the middle which was so so good.

Guga love the sous vide roulade. I took your advice on the roulade just changed the filling. We made a spinach artichoke dip and used that as the stuffing with some onions, apples and asparagus spears. We also breaded it after sous vide and pan fried for a great crust. Thank you for the help Guga!

I'm making this in my Anova sous vide as I'm watching your video to make sure temp & time is set right (I use prosciutto on the outside (no chicken skin) and sear it at the end). A warning: Be careful about cooking sous vide in plastic wrap. Cheaper Polyvinyl Chloride wraps can contain plasticizers which can leach into food, especially at high heat. If you intend to cook with a plastic wrap, make sure it's high quality Polyethylene wrap that's rated for heat contact. I have heard, but cannot confirm, that Costco plastic wrap is made of polyethylene and is suitable for sous vide cooking. Other than that, it looks delicious.

Wizkid490 a better substitute for plastic wrap would be parchment paper. It's designed for this type of coming; it will fold/roll and hold the desired shape; it's food safe, no pcb's; and it's available everywhere.

Agreed. For example if you make bread in the oven but don't like the crust to be so crunchy, you can wrap it to soften it. But make sure to warp in a plastic wrap that is safe to use in high heat or wrap it in something else. And it also applies to vacuum bags. Not all vacuum bags are meant to use in sous vide and might not be safe for that. For example never use the vacuum bag the meat comes in for sous vide. Guga does talk about this in one of his later videos.

Looks great, was thinking you could also use caul fat as a wrap instead of getting the chicken with skin... the other thing to try might be getting extra thick cut bacon and pounding THAT flatter as a wrap.

I was wondering when you were going to tell Ninja that it's chicken. TBH this chicken roulade seems to have a surprisingly small amount of chicken in it. It's probably why it's so good. As for cheese, my choice would be the one that your hand hovered right next to before settling on the provolone. Manchego.

I usually cook boneless chicken breasts at 63.5℃ for 90 mins and they come out really soft and tender...for legs n thighs with bone in...I set it up at 71.1℃ for 4 hours to 6 hours...but then this is for chickens in India...may be you have tougher chickens in Florida...but I'd appreciate if you give these time n temperature settings a shot and post a difference video...however, today I'm gonna cook legs n thighs bone in at 67.2℃ for 6-8 hours...I'll let you know how they turned out...

I made this last night. Good but I am leaving the onions out next time. I used red onions but they still overpowered the flavor of the other ingredients. I used 147 for a cooking temp.
