You have to try reindeer. Very similiar to elk but more tender meat and better tasting in my opinion. Costs a lot but ist worth it.

Given that your average bull elk is about 1000lbs on the hoof, I'd be inclined to agree. that should be a bigger piece of meat.

Yes!!! I’m so glad to see you cooking some wild game. It’s so tender because you are getting the best part of the elk, what us hunters call the “backstrap”. Elk do have tenderloins, but the backstrap is much bigger. So far I’ve cooked elk, mule deer, and antelope in my Joule. I’m surprised that Ninja thought that it was stronger flavored than deer, elk is usually more mild. Also, if that is a farm raised elk, it will likely be more mild and less “gamey” than a wild elk.. Thanks for getting some wild game cooks on the channel.

Excellent video as usual, gentlemen. My local grocer had ground elk on clearance for $6 for a one pound package, so I gave it a try. I ate it side by side with ground beef, and you couldn’t taste the ground beef next to the elk. Elk is a very strong flavor, but it was very delicious. The first bite was almost shockingly strong, and each bite built upon the next. It got more and more delicious as your taste buds acquired the intense flavor. Truly special, and delicious.

I've been hunting elk all my life, never heard of a "BUCK ELK" before today. Up here in the beautiful Rocky Mountains of Wyoming we just say bull elk. We do enjoy your video's and have purchased the water cooker which we use almost everyday, and after the kill we do enjoy bull elk meat or cow elk meat for our lunches. Maybe we should do some videos of bull elk and cow elk that we cook and send them to you folks.😎😎😎😎😎🤙🤙🤙

My top wild game meats are: Bison steak smoked with musket/apple wood and seared on charcoal , Smoked emu or ostrich, Rosemary lemon pepper Rainbow trout grilled on a cedar plank, And finally rosemary an garlic roasted rabbit or quail.

I've never had elk, only whitetail and mule deer. I'm an avid hunter and do all of the processing. One thing I've found out is that it doesn't take much seasonings to change the flavor of the meat. Whiskey does amazing things for it. When I cook venison burgers, here's what I do. Mix 5lbs of meat with 1cup BBQ sauce, 1/2cup of honey, 1/2 cup brown sugar, 2 pinches of salt, 2 pinches of black pepper, 2 teaspoons of garlic powder and a couple ounces of whiskey. I cook it in the oven in a casserole dish loosely covered in foil at 250°F for about a hour.

For wild game i can recomend you use crushed juniper berries and dried lingonberries. Dried Cranberries can be used as a substitute but in a smaller amount

Just a tip when you make game meat is to put olive oil and butter in the pan whit garlic cloves and a lot of thyme and rosemary it gives the outer crust of the meat a really good flavor. But maby you already lnow that😃 Thanks for a awesome chanel!

Elk is one of my favorite game meats, Moose is nowhere near as good in my experiences, I haven't had reindeer yet so can't say. Also Wagyu is a breed of cow, so wouldn't be of any other type of animal but would be awesome to have Wagyu like elk.

Saw the elk pics at the beginning and though "this doesn't look like an elk", checked google: Is it an elk? Is it a moose? If you’re in Sweden, the answer is “BOTH”! The iconic, majestic forest dweller Alces alces is known as a moose in North America (actually the sub-species Alces alces americana) and an elk in Europe. The word elk, like the Swedish word älg (pronounced /elj/), is taken from the Latin alces. To make matters even more confusing, elk in North America is used for an entirely different animal - a kind of deer, Cervus elaphus, otherwise known as a Wapiti. So you had Wapiti, not Moose - thanks for clearing that up google. Also that explains, why it's so crazy small. Moose racks would be 4 or 5 times that size...

North American Elk is Cervus Canadensis, European Red Deer are Cervus Elaphus, Cervus E. are structurally similar but do not grow to the sizes attained by Cervus C.

I've never had elk steak but I've had elk burgers. They were delicious! A very unique texture. It's VERY dense but still soft. Highly recommended.

I have not finished watching this vid.. will do, in about 8 minutes :oP but I was thinking.. your channel IS called Sous Vide EVERYTHING.. right?!?!... but more than 90% of the vids are MEAT. Don't get me wrong, I LOVE meat, but I am trying to get others to enjoy sous vide (some are "partly" or all vegetarians"), others like some more than just the meat for a meal. Thank you so much for doing your temperatures in F and C. It takes only ten seconds to click the microphone in a google search and say "165 F in C" but if 500,000 of your verwers do it, it wastes nearly 2 months. You're a legend! (or whoever edits the videos is :) )
