Today for you guys I will be making the Brazilian National Dish! FEIJOADA which is an amazing stew of bean and several types of different meats. Including, beef, bacon, cured meat, sausages and pork. But the awesome thing about feijoada is that everyone makes it a little different. So on this video I show my version where you can take the basics and make it your own.
HOW TO COOK FEIJOADA SOUS VIDE
I cooked it for 48hrs @ (180°F / 82.2°C)
* INGREDIENTS * I used for this sous vide cook.
4 cups of black beans
2 smoked brazilian sausages
1/4 lbs pork
1/4 lbs bacon
1/4 lbs cured meat
1/4 lbs cured pork
1/4 lbs pork shoulder smoked
1/4 lbs pork belly
1/2 cup parsley
6 gloves garlic
1 white onion
Salt and pepper to taste

I am from Saudi Arabia and I had this dish with my amazing Brazilian friends, they made it with Halal lamb instead of usual pork :) just for me ( amazing guys, I didn't even ask them to ) they used lots of BBQ flavor and it was awesome , Brazilians and south Americans in general are extremely good people ( the best). they remind me of Arab people in welcoming and generosity. Love and respect for you guys

When I was in Brazil, my host family asked me what I wanted for my last meal before I flew home, and I asked for feijoada. And it was one of those meals I'll remember for a lifetime.

Absolutely admire the historical introduction! Many people eat feijoada, and don’t understand why the traditional dish looks and tastes the way It does. A tip from a Brazilian that knows how to cook a great feijoada: Soak the beans 24h in water before cooking and discard the water. Black beans have a strong toxin that's hard on the stomach, and soaking in water easies it. It also will help it be more "soft" when you sous vide it :) But anyway, its great to see a different take on how to do this dish :) thanks!

I like the fact that it's an "open" recipe, too. You are free to combine basically whatever meats that you like with the standard spices - just as long as you have the black beans. In that respect, it is much like boiled dinner is to us in the northern states. A typical boiled dinner will have several meats (usually also fatty pork products) along with vegetables like corn on the cob, carrots, cabbage, and onions. The "base" for boiled dinner is potatoes, and they do absorb a lot of the other flavors from the broth. The basic spices are salt, black pepper, and garlic. I also add parsley. It makes for an easy, hearty meal on a cold day.

Great channel! So good that I bought a sous vide circulator from an online site and now I’m trying the recipes you guys are showcasing. The steaks are outstanding! My friends thought I was nuts when I explained it, but now they’re trying it for themselves and spreading the word. The sous vide circulator manufacturers should give you guys a huge contract for educating the masses!

I made a couple of weeks ago something very similar. Not sous vide, but on the stove. I used red kidney beans (dry, rehydrated overnight in cold water), a large piece of a pork shoulder which I had smoked previously (cubed), a large piece of kielbasa (sliced) and a packet of salt pork (cut into lardons). All was stewed on low for many, many hours - I think 10h or so. It was delicious. It's a free-style interpretation of a classic Romanian dish. I think every major culture in the world has a version of it, be it "pork and beans", "cassoulet", "fasole cu carne" or "feijoada"

I am definitely doing this! I have only two nights a week with my children and would love to see videos of ways to sous vide entire meals at once. Something like a meat in one pouch and veggies in another.
