The picanha cost a lot more than the gold. That stuff is super thin and doesn't add up to any significant weight.

He showed me the whole sirloin which was 8.5 lbs so not what I need either. Is there more of that to get and butcher myself. Definitely didn't see anything that looked like when you went to butcher to get it.

should retest this, picanha sous vide with gold flakes, and one either grilled or seared in a pan with gold flakes and see if it's any difference.. I hear others say it help s some what on a burger, but the burger wasn't sous vide, so I'm wondering if Sous viding the picanha's stopped the gold from adding any thing other than a weird texture.
