Great video, only recommendation I have is to not broil it. Definitely sear it on the iron but use a small butane torch before you sear it on the iron. Broiling proteins like pork makes them go dryer than you would expect in just seconds. Heat the outside not the in.

I find with sous vide it just doesn’t dry out.

Any tips on adjustment to time and temp if using a smaller roast? Just bought a 2.25 lb roast … I’m thinking of cooking 1/2 and freezing 1/2. Not sure if size affects time in the bath. Assume temp stays the same.

I made this but my thermometer probe read lower temps in the center so I'd probably go 3.5 hrs
