Gordon doesn’t hate frozen food. He hates people lying about using it. He’s talked in the past about enjoying fast food and stuff like that. He just doesn’t like chefs and restaurant owners misrepresenting their product.

@ Because that particular food was disgusting and dreadful? Especially in relation to how it SHOULD be if prepared fresh. That doesn’t have solely to do with it being frozen. A lot of the time it’s stored improperly, for too long, prepared improperly, etc. Plus, the way a product INTENDED as a frozen commercial item is prepared and stuff on an industrial scale is way different that way a restaurant kitchen is doing. Again, he doesn’t hate frozen foods when used for the intended purpose. No one would expect most frozen foods to be as good as when made fresh, so it would be disgusting if you’re expecting a fresh dish.

That wasnt a wellington filling and the final product Gordon sold didn't represent or even passably appear similar to wellington at all. Not to mention the video says to use WHATEVER you have left over. He didnt tell you to make birria, he just used it because thats what HE has, but you can use anything. Besides, its like 2 extra steps to fill your own circles of dough with meat.

This particular dish in the video was easy because Guga had the ingredients ready and on hand, and he told all of us that we could do the same with ANYTHING. Leftover turkey from Thanksgiving. Leftover ham. Leftover pot roast. Leftover lunch meat even! Or left over plain ground beef from hamburger helper or something. Because it's easy to put whatever meat in dough balls and bake them. The whole point is that it isn't limited to some super high effort meal you made a week ago, it can be whatever you want no matter the quality. But it can still be delicious AND easy to make if you know the simple things that can elevate the dish. This is nothing like your "super cheap" wagyu comparison you made.

There should also be a mushroom component (for the mushroom duxelle) to get the flavor profile right. Drain some canned mushrooms, give them a quick chop, and throw them in with the meat. Still lazy, but more accurate. The crepe component is still missing, but it's mostly functional to prevent seepage and not for flavor, so we can safely drop it. :D

Lazy chef here. To toast your tortia dishes like burritos, crunch wraps, even quesadillas pop them in the airfrier at around 400°F for about 5 minutes. I promise you will LOVE what comes out :)

One significant difference on the tortilla based version, besides cooking method, is balance. There is a LOT more meat there. If you made a puff pastry one the same size it would be juicier because there is more meat to help retain the moisture. When they are made small there is a much higher ratio of dough to meat. That dough absorbs some moisture too.

Interesting that the Chef's frozen one was liked enough that if there was no comparable and it was served to them they would have thought this is good. I will try it out. You didn’t even switch your meet up but you did inspire me to make a Wellington bite and I think I know exactly how to do it please beat me to the punch and I want to see if our ideas are the samethere will be prosciutto ducks, Cell and everything inside. Haven’t decided on the crêpe yet but I know exactly where to put it. Oh my goodness I just got another idea it’s gonna be beautiful.

Mmmm, Birria Wellington! The one with the tortilla would be a crunchwrap at Taco Bell. We tried the Shepherd's Pie and the Chicken Pot Pie. Substandard for grocery store frozen entrees. Instead of beef Wellington bites they should just be called British Beef Pasties. Besides making a couple by hand is always gonna look better than machine mass made for the world. I’m gonna see if my Costco has them and give it a try. I like the convenience of them with a quick sauce like a peppercorn sauce, I think they would be fantastic quick meal when you have no time during the week. Edit: my Costco in New Jersey does not carry them so it must be a Florida thing.

I've had the fish and chips version, and the good fortune of having the fish and chips at one of his restaurants (the one in St. Louis). It was pretty good for a frozen convenience meal, but obviously it doesn't compare to proper fish and chips, and definitely doesn't compare to the fish and chips from his restaurant.
