Southern Cooking, Fried Potato Cakes/Patties & health update

It was just Bryant and I at home today and I had leftover mashed potatoes I needed to do something with. So I decided to make potato cakes or patties. The crazier this world get the more conscience I am to how we use and manage our food. If I can recreate something as simple as mashed potatoes into something new why not do it? I remember my mom making them when I was little. So let's do it today!
Potato Cakes/Patties
2.5 cup mashed potatoes
green onions (optional)
1 cup grated cheese
1 egg
1/2 cup of AP Flour
1/2 tsp baking powder
S&P
garlic powder
oil for frying

I was born in California, grew up in Missouri, just moved from Colorado to Kansas and we have called them mashed potatoes in every place. So mashed...lol My grandmother always made made potato cakes with leftover mashed potatoes. Hers had flour, eggs, chopped onion, salt, and pepper, but she always formed them into patties before she fried them...yumminess.

Love potato cakes! I make my mashed potatoes without milk, just butter, cream cheese wtih lots of garlic along with salt and pepper. The next day when they are cold, I make patties and fry them in butter. I never have to add flour, bp, or egg but do add cheese and onions at times. Wrote this so those who cannot have flour will know. Your's look delicious!

Hi Leslie and Bryant! I am originally from Carbondale, IL but have lived in Cedar Rapids, Iowa for over 30 years. They are called mashed potatoes in both Illinois and Iowa. My Mother used to make potato cakes whenever I was a child growing up. I always loved them. Since my husband and I are on Keto we can’t have potatoes, sweet potatoes, rice or corn. I’ve lost 73 pounds on Keto and my husband has lost 62 pounds. One of these days we will have potatoes again. But for now I love how this diet has made me feel. I’m no longer pre diabetic. My cholesterol is normal now and my inflammation is nearly gone. I know this is an old video. But I love all of your videos. Take care and God bless you!

I’m from Oklahoma. My Mom always called them mashed potatoes. If we had creamed potatoes those were small “new potatoes” from the garden. They were boiled and then covered in a cream sauce.

I’m from Minnesota and to me that’s mashed potatoes creamed potatoes would be a little baby potatoes cut in half or quarters floating around in a white sauce that would be cream potatoes which we do too but that way you have there is mashed potatoes

I live in western North Carolina and if I use a mixer on my potatoes I call them whipped and if I use a hand masher I call them mashed because it leaves pieces of small potatoes. The mixer gets them real smooth 👌

Me and all of my family are from NC near Raleigh. My one Grandma made mashed potatoes. She mashed them with a potato masher. My other Grandma made creamed potatoes. She creamed them with a mixer.

My mom made stewed potatoes she boil the potatoes and and make a sauce of milk and flour mix and pour into the potatoes add pepper salt and butter so good with corn bread.sometimes she would put onions in also.

NEVER had leftover potatoes growing up!! Me mother raised 12 children, 6 of her brothers and sisters, and six of her own. So with all those mouths to feed never any leftovers. God bless the church for feeding, clothing, and educating all of the 12.

BTW people here on UTUBE make their grilled sandwich with mayonnaise instead of butter or equivalent !!!!! I tried it, it's pretty good IF you use a non stick skillet ot griddle, otherwise it sticks !!!!!

I'm from an Irish bkround . We ALWAYS made a huge amount of Mashed ( or ANY) Potatoes at any given meal. Ms. Leslie besides your potato pancakes ( that's what WE called them) mashed potatoes are yummy reheated in a thick bottom pot (so as not to scorch/burn) just add a touch of milk & keep stirring & they taste as yummy as the 1st night. That's what I did growing up since my Mom HATED to cook so by age 9-10, ( going on 25 lol)I was in charge of the kitchen. Good thing I loved to cook & bake. I was always careful & was taught early. My Mom became ill & by 12 I was in charge of running the entire house & taking care of her. I grew up to be a Nurse. I'm originally from Phila, moved to Central NJ We call them MASHED Potatoes. Don't ever recall hearing them called "CREAMED" Unless it was corn or spinach lol!~Hugs from Anita P.S. They were made with crushed saltines instead of flour, egg, and really good with crumbled bacon and cheese. Really, anything you like could be added. I'm 69 and have had them about every way possible. LOL
