Why is everyone hating on his cooking time? Maybe he enjoys his meat rare. I’m watching simply for the recipe. If you’re watching this video for the cook time and think it’s undercooked, then increase your time cooked on each side. Idiots. It’s his opinion on taste and he’s entitled to it.

This version without the bread crumbs is probably the authentic version. Since I feel in the old days, breadcrumbs was not as commonly used due to people being frugal in rural America……Still good quality though

Some people eat medium rare pork, but for most of us, it has to be well done. 8 minutes is not enough, no matter what "chefs" and the FDA say. If the pork is bleeding, I ain't eating... However, the recipe is legit. It's exactly how we were taught to make them.
@keithromero3095

Yes. You're right. Always cook organic longer. But food science has added hormones (GMOs) that kill the bacteria making it easier and quicker to cook. Long cook times ruin meat (and pork) unnecessarily. Chefs are experts and love our momma's all we want. They were not experts. It makes me sad that people no longer listen to the experts. (Chefs!). You really think they want to make you sick and lose your money? They want you to taste a juicy gaddam poke-chop like it should be tasted. Not over cooked. Life transforming stuff.

Just like mommas. I do the egg/flour dredge 3-4 times. A scoop of corn starch in the flour makes for super thick coating. Now, some apple sauce, and greens.
