I had no idea that sourdough is better for diabetics!! Brooke, that is a game changer for me because I don’t eat bread much cause of the sugar effects. I am thinking I will try your method and I can have some amazing bread. I definitely need a Dutch oven first, though. Thanks for educating me about the benefits of sourdough because I am so excited and happy to try it now!!

I'm drooling and dreaming of the times that I was able to bake and eat homemade bread of all kinds. Sadly I discovered that I am now allergic and can no longer eat what was once one of my greatest joys in food. My children's friends would tell me that they loved eating over because I always had fresh baked bread for supper. Using leftovers for French Toast in the morning is wonderful! Enjoy your hard work!

You rolled the dough ball exactly like a PRO. Takes a lot of practice, time and SKILL with exact measurements to make a perfect loaf of bread. Kudos to you. Great job. Only thing I’ve done different with the banneton…is lay the dough directly into the floured /corn meal lined basket and use the liners as covers. I appreciate your labor of love. I’ve done home made bread….only one loaf at a time however.….so I know u worked long time to do this. TY

I had success using your recipe and methods. I usually make one loaf so use half the measurements you give. The only things I change is the amount of water I use, so I use 25g less water as it gets too soft otherwise and if I start in the morning I leave the dough to bulk ferment on the kitchen counter and bake later the same say between 10-12 hours. And it is perfect. Thank you out of all the videos I have watch on making sourdough bread, yours is the best.
