I was always taught to cook out the tomato paste almost as a deglazing after browning off the meat. It has some acidity so picks up the fond. It also takes out any bitterness. You have to have tomato paste. It doesn't work without it. The alternative make a big batch, cook for a long time 2 even 3 hours and freeze. Here, and its an odd one, at the end add a bit of milk and or butter. That works too. We need a good name too for this because the Italians say bolognese is never with spaghetti. Something like spaghetti dell'inglese

Indeed. I think our Spaghetti bolognese is a somewhat Anglicised dish, however from my many times if Italy and cooking there, I see many similarities to traditional Italian dishes. I think the cooking out of tomato paste is something to do with removing the processed or tin/jar flavour?, I not sure I discern that in modern commercial canning but it's never a bad practice... Thank you..

it is. When it first arrive in the UK, it was 90% mince with some spaghetti broken up cooked in the sauce. A strange mix. It was Elizabeth David who started the change. It's worth getting a copy of some of her books. I'm sure second hand they are cheap. Then put that in the context of post war UK. Food rationing. Olive oil was small bottles from a Chemist. @@Steve-Owens

As i remember is the recipe asked to place the sauce in the oven after preparing the sauce then add milk. I found it odd and tasty ❤
