Spaghetti with Fennel and Bitter Greens

Everyone always asks me for new pasta ideas. This one is not only quick to make and deliciously simple, it is also healthy - and economical! The wonderful combination of Fennel, Escarole, Onions, Garlic and Grana Padano cheese is all brought together beautifully with the addition of a little Balsamic Vinegar. Tutti a Tavola A Mangiare!

I love bitter greens but as someone prone to Kidney stones I have to pay attention to Oxalates, but I still enjoy seeing them used and enjoy watching lovely Lidia cook with them.

I have a small fennel bulb, and although spinach isn't bitter, I have a bit I need to use. So in the pan it goes.... I know it will be good.
