I often cook for my elderly parents and use many of Nikki’s recipes. They really enjoyed this last night and didn’t need any additional sides. Made this tonight for friends who are visiting with their two children age 4 and 8. They all absolutely loved it with the 4 year old saying it was the best chicken ever!! All that was left on plates was the lemon slices! Will definitely make this again :D

Great videos. I made this first time yesterday for guests. Looked exactly like the video when done. I did adjust the water down from 3 3/4 cups to 2 cups as the rice calls for. Perfect. 3 3/4 cups would have been way too much.

My wife makes much the same, but, she adds split green olives, red kidney beans and fresh green chili to it. It just enhances an already tasty dish. Oh, and it goes a lot further!

You've never steered me wrong before but this one is going to be a challenge. In my area we have Mexican chorizo, Salvadoran and Filipino. Spanish is hard to come by. I'll have to substitute with another cured sausage.

Made this for dinner and I realised the chicken stock was WAY TOO MUCH compared to the amount of rice but it was too late I already added it then my dish turned out SOUPY and weird I had to strain and air fry the rice so the water dried up ( baking it did nothing ) and yea that's how it went .....took forever to make ( even tho I'm generally rly patient when it comes to cooking) by the time it was ready to serve I didnt even feel like eating anymore :( it's too bad cuz I rly thought this was gonna be a good dish

If that’s the case just add a little more rice or add a peeled cubed potato to absorb all that moisture.... I like the idea of one pot meals. It’s a great recipe

Yes a big misprint there about the ratio of rice to stock. Usual ratio is one cup rice to two cups of stock. So I think it should have been two and three quarter cups of stock instead of three and three quarter cups.
