Made roasted pork belly loads of time - but simmering for 2 hours? When we're paying £££ for energy? Crazy recipe and needless waste of resources. Throw it in the air fryer for 30 mins, brush with a mixed paste of honey, mustard, tomato puree, garlic, paprika and white pepper. Job done for a fraction of the cost.

Lard is the correct way, but the traditional method uses enough lard to half fill a medium pot. You then deep fry those part boiled potatoes to make the tastiest, crunchiest roasters you've ever tasted. The lard will solidify once it cools, then you can re-use it for another day. Stunning chips too.

I like nothing more than a baked spud with butter and cheese, a good strong cheddar. It takes a long time in an oven so when I got a microwave and found out how quickly the potato cooked in it, I would turn the oven on at the same time I put the potato to cook in the microwave - something in the region of 10 minutes, depending on the size of course, so by the time the potato was cooked, the oven would be hot, putting the potato in the oven for a few minutes to crisp up, although, not too much as don't want the skin rock solid. Cutting the potato open (slitting it down the length in the middle prior to cooking), scooping it out, melting in butter and cheese with a good sprinkling of salt and pepper. Takes little more than 15 minutes altogether. I hadn't thought of smearing oil on it so will do that next time.

I've tried a few different butter chicken recipes and this is by far the best, you never let me down. Only adjustments I made was I put 6 cloves of garlic in the blender with the onion, I fried the dry spices with the onion mix before adding the chicken and I added dried fenugreek towards the end 😊
