A tip about the paint on your side firebox burning off: try seasoning it with cooking oil (canola works great) like a cast iron skillet while it's hot. Just put a generous amount on a folded-over paper towel and rub it down about once or twice an hour. The oil will start to smoke as the heat bakes it on. The end result is a nice, shiny black rustproof coating. Works better than high temperature wood stove and automotive paints, which I previously tried, to no avail.

Extremely helpful video, I have the same grill/smoker and for the longest have been trying to figure out the proper way to smoke. I had a wood smoker for the longest time but with age, she passed on...but the offset smoker is ideal.

I'm a cook but I just bought a offset smoker and never used one before so this will definitely help me for labor day eve tomorrow. Every restaurant I have managed always had and electric smoker and I did too but it ended up dying on me. I like charcoal way more though but keeping the correct heat may be a bit more challenging. I also have the same offset smoker I bought it used and got it for 100 dollars with BBQ accessories and they also delivered it because in my small town we take care of each other. I now have one small chimney and two large ones.

I do pineapple juice with peach or apricot jam or jelly stir till it's real fine then spread with a little sriracha but I'll smoke then chopped my ribs before wrapping

I start meat side up for the "3" portion of the cook. Once I wrap, I put them meat down and then meat UP again for the last portion of the 3-2-1 method.. sorry I didn't see this comment earlier. Hope that helps and thank you for watching!

Wondering what temp range you tried to hold the offset during each stage. Maybe I missed that particular info. I did hear you mention what temp your smoker was at from time to time, but I would have liked to hear you say what temperature you were trying to hold. Ribs look good! Tons of useful info. @omnitep honestly this video was so long ago it's hard to say specifically... BUT I usually cook ribs anywhere from 225-250 degrees F the whole time. I'll bump the temps up to 275 after I wrap. Give or take... hope that helps! Thanks for your support!

Looks great. Ive been smoking now fow a couple months. Ive been wanting a smoker for years now and had a neighbor that was upgrading and he was throwing his old one away. It has seen its better days but im learning on it. Its has gaps and has a hard time holding a even temp. So im glad im learning on it because its taught me alot about trying to keep a clean fire and even temp. When i do get a new one i wont know how to act. Havent ruined anything yet,well i did run some dirty smoke over some wings. I still ate them but i know now to make sure my wood is nice a dry. Anyways enjoyed your video and will be doing some ribs this weekend. Alot of work on such a small smoker but im loveing it

Yea so did get a new smoker. It happened to be the same one you have. Got it from a guy on line. Gave him 150 he was asking 200. It came with cover he never used it as a smoker he just grill a couple times on it. So yet I'm up and smokeing now. I'm on here to looking for a spicy rub . I'm dieing for some spicy ribs. I have 2 racks of spare ribs. Wife don't do spicy so going to one for her and try to find a good spicy rub for myself. I may just make one with some Cayenne pepper onion powder salt and pepper.... cooking g tomar so if by chance you get this or anyone else does sure could use a recommendation on a tasty hot rub. Thx bud

O yea the smoker I bought was brand new. More less he never use the firebox . It's looked brand new but not for long I think It was my 1st, 2nd cook and paint started peeling off. I don't care but was surprised it did that so fast. I've done went over the whole thing with Pam to try to keep it looking some what nice but hey its all good. I keep it covered. Had to seal a few spots where I was looseing smoke. Take care happy smokeing!!

Is the meat room temp before you begin the mustard and rub?

Usually I take it out of the fridge, unpackage it, trim it, pat it dry and then apply mustard and rub. So it does have some time in room temperature before I start. I have also applied binder and seasoning, and then placed in the fridge to let it "sweat out" while I get the smoker going. So either way (cold or room temp) is fine, in my experience.

Equipment and methods have drastically changed since publishing this video... but I think the only thing that colder weather does, is that it requires a bit more fuel to maintain the temps! I'm in Northern illinois so not too terribly far from ya! Thanks for watching!

Hey so i have the same grill as this. I have heaps of trouble maintaining the temp. Seem to always be trying to get it to cool down as it sits up near 300. Trying to get a constant 225-250 seems to be tricky

I use very skinny splits of wood to keep the fire going! Also playing with the vents will help reduce the temps. Remember, a smaller fire is easier to maintain so use smaller wood splits and let them catch really good!

Once the coals are lit and turn ashy, usually the smoke clears up. Same goes foe wood. U have to let it catch pretty good before hitting the lid. Hope that helps!

If you don't want to add anything after wrapping, just simply throw it back on the smoker until you get the desired outter texture! Thanks for watching!

I just spent 6 hrs doing some spare ribs and Bushes baked beans following your recipe. I usually do baby backs but had these in the freezer. They turned out great and were delicious. And it was dark outside when they finished up. Lol. Thanks for doing this the video. Ron
