Even simpler is to sparge with room-temp water. Like just about everything in homebrewing, there are differing opinions on whether it makes any real difference. Great idea with the hop basket.

A handy trick for checking how much wort you have is to attach a piece of tubing to the drain and route it past the markings and up through one of the handles to hold it up high, then open the valve and the tube will fill with wort to the level inside.

212 Fahrenheit! Controller needs to be properly calibrated to reflect that temperature. Boil temperature will change at higher altitudes.

Do you recommend using both of the mesh strainers in the malt pipe that come with the brewzilla kit?

It's a good idea to use both to prevent too much particulate getting through and potentially clogging the pump during use.

I'm not getting my target gravity that way. what can you do to extract a little more sugar from the grain? I normally wind up using the pump to recirculate back through the malt pipe for ten to twenty minutes.
