Begin by marinating 8 pieces of chicken with ½ tablespoon of salt and ½ cup of sour yogurt. Allow them to rest for 15 minutes.
Next, heat 3 tablespoons of cooking oil in a pan over high heat. Drop in 2 pieces of cinnamon, 4 pieces of cardamom, and 1 bay leaf. Afterward, add 1 cup of chopped onions, and cook until they're soft and fragrant.
Now, it's time to add our marinated chicken pieces. Mix them with onions, then add 1 chopped tomato and 5 green chilies. Stir over high heat for about 3 to 4 minutes.
Let’s add all the remaining ingredients and stir everything together. Continue cooking for a couple of minutes.
Now, add 200 ml of water, lower the heat to medium, and let it cook for 15 to 20 minutes.
Finally, add ½ tablespoon of curry powder and ½ tablespoon of garam masala powder. Let it simmer for an additional 3 to 4 minutes.
Our dish should be ready to serve. Plate it, garnish with crispy fried onions (Beresta), and serve hot with rice or roti. Enjoy your Bangladeshi Special Chicken Curry!
