Let's enjoy a snowy day and make some yummy food!
Recipes:
Chocolate Walnut Tea Cake
From the book 365 Great Chocolate Desserts by Natalie Haughton, Harpers Collins Publisher, 1991
Ingredients
2 cups all purpose flour
1 tsp baking soda
1 cup granulated sugar
1/2 tsp salt
1.5 tsp espresso powder
1 cup of water
1 tsp vanilla extract
4 TBSP butter-softened
2 ounces dark chocolate morsels-melted
1 egg
1 cup chopped walnuts
Directions:
Grease 1 loaf pan
Preheat oven 350 degrees F
Boil water and remove from heat-add the espresso powder. Mix well. Allow to cool
Melt chocolate in microwave and allow to cool
In a stand mixer, mix butter, sugar, vanilla and egg until fluffy
Mix baking soda, flour and salt in small bowl
Alternatively add the flour mixture and coffee to the cake batter,
Fold in the walnuts to the batter
If you like a lot of chocolate, you can also add some extra chocolate chips too!
Pour batter into prepared loaf pan and bake 55 minutes.
Test center of cake, if needed bake another 5 minutes.
Serve with whipped cream.
Chicken and Rice Bake
(I made this recipe up based on what I had in the house!)
Ingredients
5 chicken breasts
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
salt and pepper to taste
1.5 cups of white rice
2 TBSP butter-chopped
1.5 cups of chicken broth
1/2 cup of white wine
1/2 cup of water
1/2 red onion sliced
2 cloves garlic-chopped
1 cup mozzarella cheese chopped
Directions
Season chicken breasts with salt and pepper, paprika and garlic/onion powders
Preheat oven 350 degrees F
Line a 13x9 baking dish with tin foil
layer onion and butter in baking dish and bake 10 minutes in oven
Remove baking dish from oven and add rice and garlic. Mix well
Pour the water, wine and chicken broth into the dish and mix. with the rice.
Lay the seasoned chicken breasts over the rice mixture.
Cover the baking dish with tin foil and bake 30 minutes.
Remove baking pan from oven and uncover.
Add mozzarella cheese on top of the chicken.
Bake another 20 minutes uncovered.
Remove from oven. Take chicken breasts out of casserole and slice.
Taste the rice....if it is not done, you can place baking dish back into oven without the chicken for a few minutes.
Place sliced chicken back to the baking pan and mix with the rice.
