The market closes pretty early so if you want to see everything, I would suggest going in the morning or early afternoon.

Fun to see your trip. May I recommend not to point with your ohashi (chopsticks) or tap the ends on the table or plate with them to straighten them in your hand. It’s considered impolite in Japan.

Is Kanazawa worth staying 2 days? I always see people just day trip it.

I would say day trip is enough, but I wasn't able to visit the geisha district because we ran out of time so it might be worth it to stay a night.

It puzzles me how much time Japanese people will spend just waiting in line lol. I wouldn't wait for 2 hours even if the food was free :). Nevertheless, the food, although quite pricey, looks nice. Kanagawa seems to be so touristy oriented :/. I was going to go, but I think I'll skip it.
