thanks, superb! Highly recommend this recipe! I did not have certain spices at home. So I added chilli flakes, a bit of chilli powder raw green chillies (no dried whole chillies) a bit of garlic, Sri Lankan curry powder and turmeric (only two spices).

I love this recipe so much. I’ve used it to make it with cauliflower as a dish, chicken as a dish and even broccoli. Just make the sauce first and add the other ingredients at the end. Looooove it! It’s my go to coconut curry recipe!

Loved this recipe. Restaurant style dish. Didn’t use the pepper and only had fennel seeds. Coconut milk I used was a little thick too. Served it with rice and coriander. This is a dish I will make often. Love the addition of curry leaves!

Next time will add more green chillies and perhaps swap the dried red chillies for fresh red ones to raise the heat to Indonesian taste. That aside, it was a delicious, well balanced delight. Thank you!

EXCELLENT! I didn't have dried chili, nor shrimp. I used diced chicken thighs. I seasoned the chicken things lightly with some generic chicken seasoning and a bit of tumeric, because I'm always afraid the the chicken tasting dull. All in all, EXCELLENT recipe, easy, no exotic spices, DELICIOUS outcome!.

please can you tell me what you mean by a thin and thick extract of coconut ?
@SpiceEats4 ай бұрын
Traditionally coconut milk is made by grinding the coconut flesh with water and straining the coconut milk. 1st time the coconut milk is taken out it’s called thick extract- thick coconut milk. After this more water is added to the ground coconut and the coconut milk is strained a 2nd time. Since this is not so thick it is called thin extract. For you, in case you’re using readymade coconut milk it will be quite thick so you can use that for thick extract and when thin extract is required dilute it with little water. Hope this helps Ken 😊

If using chicken thigh i assume you need to pre-cook chicken before adding?
@SpiceEats5 ай бұрын
Yes you could season with salt and crushed pepper and fry it for around 5-7 mins before adding it as shown for the prawns. Alternatively you could try this recipe using chicken thighs CHICKEN CURRY IN COCONUT MILK | MILD CHICKEN CURRY WITH COCONUT MILK kzbin.info/www/bejne/mJq9n615bM1-fNE 😊

@suzanhodges4152 ай бұрын
Lovely, but don’t add the prawns in that early unless they are still in the shell. Personally I left the shell on. One, helps the meat to absorb the juices whilst leaving it tender. And it gives the curry a more “seafood” taste.
