I wanted to ask, after you half the crab, there's the dark greenish stuff on the crab. Some parts are whitish too. Do we wash them off under running tap? What is this?

+Grace Wu our pleasure Grace. Just asked my hubby who is the expert. Greenish part is actually the 膏。if it's green, it's from a female crab. If it's yellowish, it's from a male Crab. Don't wash it. Some people like to eat that. :) if it's white, can wash it off because they are intestines.

Many people will use that remaining part and I have heard it called as crab butter. We will cook it with the crab or cook it separately to be used as sauce/topping on rice. That's the best stuff and you cannot find this for sale without it being cooked already.

I wished we watched this before doing a dinner party of Singapore Chilli crab here in UK! We had no idea how to kill them (as so many versions online) and although we knew we must wash the crabs, we didn't know which parts were edible and what parts weren't! In the end, we had 6 life crabs crawling around , being ferried between sink and freezer, and being prepared in so many different ways! It took us 2 hours to learn and prepare the crabs! Now I know the proper way crabs are prepared at "home" in Singapore. Lol, on hindsight, I should have "opened" my eyes when my family cooked crabs! Anyhow, thank you for showing how it's done!

What about putting the crab to sleep in the freezer? How do we know the urine is totally clear? I saw some black stuff on the inside of my crab shell? They are OK to be eaten? I rinse them but they seem to be part of the gloey mass.
