Ranveer! Before frying the eggs some lil cuts should be made on the eggs, a lil salt and haldi should be mixed. Then fry atleast 5 onions to balance this quantity. After frying the onions add garlic paste a little more, lastly add ginger but not much as it could leave bitter taste after frying. Then add masalas mix and tomatoes.

Try adding gorom moshla a few mins before the cooking stops it takes the dish to another level. Also, my mother adds green peas. That brings out the sweetness in the gravy, makes it amazing to taste. Thanks for your videos. I have been binge watching them for the last few weeks and cooking up a storm in my kitchen :)

Yes I was thinking the same… either whole at the beginning or grounded at the end… better if it is made in the shil nora… my ma sometimes grind the whole garam masala with the tomato purée itself… it gives a very different taste to the gravy!!!

1)In tarka we add jeera and bay leaf and no dry red chilli. 2) we slit the eggs from four sides and then fry. 3) we add a little bit of sugar to balance the taste. 4) always add little bit of garam masala and ghee at the end

It’s our regular dish. When we want to eat egg curry with pulao….we completely change the recipe and use coconut milk+onion beresta+a pinch sugar but skip jeera, dry red chili, tomatoes…..it becomes a divinely delicious dish.

Love the love you show while cooking 😊 At home we fry the eggs a bit more brown and on all sides in low to medium heat . I use two spoons to hold the eggs vertically and fry the top and bottom part of each egg by turn. The crunchy crust of the egg adds to the flavor.

I can still remember the nights of the winter days when my mom starts to coock hasher dimer kosha (duck egg kosha) and ruti (Chapati) for the dinner. It is one of the perfect dinner for the winter times. But here you should add little bit of sugar and black pepper for the taste and coriander leaves (in winter days) and/or Garam masala for the smell. Or you can add little bit of paste of coriander leaves with the chopped tomato and latter before turning off the heat resource add Garam masala.

A few differences between your recipe and a truly bengali recipe 1. We make slits on the surface of the eggs, add salt and turmeric before frying. 2. Cumin powder is added in a larger quantity than coriander powder. Many skip coriandet powder in this recipe. 3. We don't like a sour taste, so the amount of tomato will be very little. 4. Ginger garlic paste is also added in some cases.

Perfect!! Just try another variation sometime, I am sure u ll like the flavours. Put kalonji in foron other than jeera tejpatta n mirch. And lastly finish with crushed bengali garam masala(elaichi+dalchini) in very little amount. Just give it a try once! the aroma of slit green chilli and bengali garam masala together is just something else!!

Hi Ranveer… before adding water to modify the consistency of the gravy 1 tea spoon sugar needs to be added. The sugar will balance the sourness from the tomato and make the dimer kosha taste even better
