Quick note if you are cooking this for a friend with a wheat or gluten allergy! Please double check your sauce ingredients. Hoisin AND soy sauce are often made with wheat, so get a gluten free version of hoisin and use tamari (tastes like soy sauce but is wheat free)

I make something similar and I actually thicken the sauce with a bit of rice flour. It has a less gloopy more velvety texture than corn starch and is also dirt cheap. Great video as always.

* If you want this totally wheat/gluten free, do not use hoisin and use gluten free soy sauce. Hoisin, soy sauce, and oyster sauce all contain wheat flour! Fish sauce and sugar is a good substitute :)

There are varieties of soy sauce without any wheat at all available; same goes for oyster sauce. :) But that is a good point, and people often overlook condiments for allergens.

I put mine in cold water for about 45min -1hr because it helps the noodles not stick to each other. In the mean time I prep. Which is a key component in making Pad Thai.

I made this tonight and it was very nice! Definitely a keeper for sure. Only thing I added was crushed cashews on the top which added a nice texture to the meal too.

Cue this as the first time I've made something well before a Food Wishes video. Rice noodles are amazing, and by far my favourite noodle. Going to have to attempt the cooking technique for the rice noodles. I've always prepared a sauce, put the rice noodles into the sauce to absorb the moisture and cook as I reduce the sauce over a boil, absorbing the flavour then add those noodles mid fry to the wok and slowly mix them through whatever stuff I'm flash frying. Curious to try it this way round!

I tried it using the 10-minute method and they always come out somewhere between crunchy and al dente. Not soft. I might try your method next time (boiling them in the sauce like I had wanted to but - being still unfamiliar with rice noodles...and by unfamiliar, I mean unpracticed...concerning cooking times - having never had the courage to try it that way).

I've tried a number of Chef John Asian Recipes and Sauces. They blow away any Asian place I've been to. It did take a little practise and money on the ingredients but I only make enough for one so I can practise more

Shredded veggies: A convenient way to make this is to stop at the local megamart on the way home, it the salad bar for pre-cut veggies and use pre cooked fried chicken or one of those rotisserie birds for the chicken.

One thing my Taiwanese friend told me was, Westerners cook noodles for too long. He said that they have to be almost crunchy, lol, and he was right. I can now cook great noodles.
