Nate if you remove the heart center of the garlic it will help to remove the bite. Cut the garlic in half the long way and pull the center heart out and discard then use the rest in the recipe and you find the taste of garlic without the sharp bite that garlic has. The bite comes from the center as the garlic grows from the center then out ward, thus the center has more tense and concentrated flavor; verse the outer layers where the cells of the garlic are larger, and the intensity mellows out and the concentration of flavor have mellow with age. I learn this tip from and Italian chef and it does work. The tacos look very good and filled with flavor. Using all the same ingredients except substitute the shrimp with a good fish (grilled, blacken or deep fried fillets) would make for a killer taco as well.

Good stuff indeed , I'd been thinking about tacos all day at work. I was thinking shrimp with powdered ginger and garlic with cilantro shreds of red cabbage with a key lime/ mango dressing/marinade I'd found in a seafood market, hot sauce always welcome I prefer the taste of habenero but use your preference. Always on flower tortillas. Cook on. 🤠👍

Last night I fried tempura Argentine shrimp on medium heat olive oil in cast iron. Mandolin paper thin red onions and red cabbage. Cheapness flour tortillas nuked with some Colby cheese and pickled jalapeños. That formed the base for the goodness. Squeezin’s and pleasin’s of lime wedges. No sauce needed. Beer mandatory. Read your Bible. It’s in there.
