Found this channel through TIFO, and love the style. I've done a related recipe before - same principle of tuna, eggs for binding and then add other ingredients in (I had onions, a dash of lemon juice, lemon pepper and chilli flakes). My twist was that the tuna cans were in brine, which I mainly but not completely drained. I prepared precisely the same way as this video, then baked on non-stick paper, using a spatula or fish slice (utensils don't translate well in the different varieties of English) to shape the patties as they're more moist. The consistency was different, and they're definitely more likely to break up. But when you go to flip them something which isn't quite mayonnaise, isn't quite hollandaise, but ultimately is very similar to both, drips out, so when I flip the patties I'd feed that mixture onto the uncooked side and let it continue to cook. Best served inside toasted pitta bread. Definitely doing your recipe for dinner tonight though - your extra ingredients are much better than my ones, and I think this recipe will be much less messy than the way I tried!
