We all want to make weeknights easier on ourselves. On this weeks episode of Dine it Frugal I wanted to share a simple, easy and very tasty Spinach & Ricotta Lasagng. I batch make this lasagna often and freeze, so we can eat it during the week for dinners when I'm too busy to cook.
For this recipe you will need:
250g Frozen Spinach, thawed and drain excess water
500g Ricotta Cheese
2 eggs
1.5 cups Parmesan Cheese
3 tsp. Thyme
2 tsp. Rosemary
400g Lasagna Sheets
Salt & Pepper to taste
Sauce -
1 tbsp. Olive oil
1 Brown Onion, chopped finely
4 cloves Garlic
4 x 400g Canned diced tomatoes
1/2 cup Heavy Cream
1 tsp. Sugar
Salt & Pepper to taste
