🟢Ingredients:
Eggs - 8 pcs.
Sugar - 240 gr.
Flour - 250 gr.
Baking powder - 2 tsp
Vanillin - 1 tsp
A pinch of salt
Spinach - 125 gr.
Juice of half a lemon or lime
Vegetable oil - 60 ml.
🟢Wash the spinach, dry it and puree it in a blender with lemon or lime juice and oil until it becomes a paste. I first crushed it in a large blender, then beat it with a submerged blender until it became a paste.
🟢Beat eggs with a pinch of salt, sugar, vanilla for 10-15 minutes, until the mass doubles in volume. Next, add the beaten egg mass in parts, spinach paste and pre-sifted flour along with baking powder, mix with a mixer at the lowest speed or gently with a spatula. You must mix very carefully so that the egg mass does not settle, but becomes homogeneous.
🟢Transfer the mixture into the mold. My form is 24x7 cm.
We do not lubricate the sides of the mold with anything.
🟢Place the biscuit in a preheated oven at 180° for 10 minutes, then reduce the degrees to 160 and bake until done. For the first 20-25 minutes, we don’t look into the oven and bake until the biscuit is ready; we check the readiness with a skewer or toothpick. Remove the finished biscuit from the oven, leave it in the mold for 15 minutes and then remove it from the mold. Cool completely at room temperature.
