I have a carrot cake story to share. My mom makes her carrot cake with crushed pineapple in it, and it is INSANELY GOOD. She used to own a restaurant in my hometown and she was written up in the paper repeatedly for her carrot cake! It's so funny, sometimes when we're out in public, some people still recognize her and talk about her cake! "Connie's carrot cake" is a real thing around here!!! She makes a vegan version that tastes just as good as the original. Can't even tell it's different!

a really good trick with carrot cake is to squeeze the excess liquid out of the shredded carrots and put the liquid back into the cake with the wet ingredients; it keeps the sweetness from the carrots but makes the cake less dense, because when the carrots are weighed down with water, it can make the cake fall.

When I was a kid, my family used to make zucchini-hazelnut-squares (so basically cake in square form just as you did with the carrot cake) aaaaand just regular "Gugelhupf" cake (whatever that is called in english) and also some nice Apricot Sheet Cake ("Marillenblechkuchen") and Black Forest Cake :'D When it comes to sweet desserts... And we used to have "Brioche/Striezel" for breakfast during easter time :D Which that's the best thing ever with Nutella hahahaha ♥♥♥

I love to bake my carrot cake in muffin tins and then dip pieces in frosting or in a coconut whipped cream (usually I pair my recipe with coconut whipped cream or coconut yogurt). I have to try your recipe too, because it sounds so yummy with pecans! Also, that cashew frosting looks yummy!

I am not that great at baking and making desserts. But that doesn't mean I won't give them a go. It is good to make some chocolate free recipes. Coconut Cream, Soya or Oat (subject to any allergies/intolerances) could be alternatives to Cashew nuts.

If you don't own a high speed blender you can make icing out of vegan butter and mix it with sugar and a little vanilla extract. It's so good! I soften my butter for 5 seconds in the microwave before adding the sugar and vanilla. 👍

MMMMMM carrot cake is totally a classic! Pavlova is another desert that reminds me of spring and it would be really awesome to see it veganized! I imagine its a challenge, but I'm sure you could make it happen! :)

Love these! Anything I could replace the cashews with? Can't tolerate them very well. I was thinking macadamias, although they're so expensive! I'd love it if you could make something that is cocoa, cashew and peanut free for your next dessert video! Most vegan and gluten-free desserts contain at least one of those, so I'm pretty stumped :))

The carrot cake recipe looks delicious, have to try that one! Just wanted to note that oats are normally NOT gluten-free, but nevertheless there are many other substitutes like buckwheat flour that might work as well. Edit: I just did some research on that topic and it says that it's actually different in different parts of the world. So in the US there might be oats that are labeled as gluten-free whereas you won't find oats being labeled as gluten-free in New Zealand for example (in my home country Austria they aren't as well).
