I became a vegan in November of last year for health reasons. It was the first time I actually lost weight over Thanksgiving and Christmas(10lbs)!! Learned lots of great hacks like making PB from PB 2 powder, sautéing with a splash of water or vegetable stock. I actually made Vegan fondue(key to cheesy flavor is nutritional yeast and to gooey stringy cheese quality is tapioca starch). While I still ended up having to have my gallbladder removed I have no intentions of leaving a vegan lifestyle! Best wishes on your journey!

Chocolate for breakfast, yes ma’am! I watched your video last night and made the chocolate oats this morning but forgot to put the cacao powder in with the oats at the beginning. But having made plenty of chocolate chia pudding I mixed it with the maple syrup which blends up easily and then added it to the pan. Mine has banana slices, pumpkin seeds, cacao nibs rather than chopped chocolate and some peanut butter I make from PB2 powder so it doesn’t have a bunch of fat. 👍🥰

I don’t care what people eat, so long as it isn’t hurting animals, but there’s no denying that oil is terrible for health. It’s okay once in a while, but should only be used very sparingly, in the interest of health and longevity 😊

I love making cocoa oats with some shredded coconut and a drizzle of almond butter for an ode to Almond Joy. Such a decadent way to enjoy oats! I usually top it with a bit of Lily's stevia sweetened vegan chocolate and it feels like I'm having something very naughty.

Caitlin I have a question. In your cookbook, on page 224, the Chimichurri dressing calls for 1/4 cup olive brine. Is that Black or green olives?☺️

It probably doesn't matter - the taste might vary slightly, so I'd just go with whatever you prefer/have at home (why would the black olive brine be less fresh than the green olive brine?)

Thank You!! 🙂 Btw, I have to be GF, Soy-free and Nut free: So will use: a GF Flour Blend vs Reg Flour Pea or Cashew Milk vs Soy or Nut Milk Pumkin Seeds vs Walnuts PUMFU vs Tofu. (A soy-free, Pumpkin-seed based Tofu. At Whole Foods, etc). Btw, PLEASE do a Review Vid of PUMFU!!

Hey Caitlin. Those scones look amazing, but we can't have regular flour in the house because my mom has celiac. We've tried GF all purpose flours in previous desserts but they all had a strange aftertaste, even Bob's Red Mill. Do you think the ground oat flour you usually recommend for your recipes could work?

I think Minimalist Baker uses almond flour for scones. I remember making her scones and really enjoying them even tho I'm not gluten free.

I made these chickpea egg cups before. I liked them, but my boyfriend HATED the smell. Definitely make sure you like the smell before making lol. Edit: the smell of cooked chickpea flour

There is vegan butter out there and it tastes sooo good! I don’t notice the difference at all and I’m not vegan.
