Shaye, I loved seeing all the homeschooling paraphernalia on your table! Oh, how I miss the days of paint pots, crayons, glitter glue and construction paper! You brought that memory all back! Cherish these times with your kids! Mine went soooo very fast! My own kids are grown and gone now, my grandchildren are in college and I hardly ever see my loved ones! But I am thankful for the times I had with all of them and these memories I hold on too!

I love your videos; they are so calming!! My favorite activity at the end of the day, right as the sun is setting, is to walk around my garden. The bees have gone to sleep for the night, the snake is in his hiding hole waiting for the sun to come back out, and the plants are drinking in the cooler air. It's such a magical time to assess, dream, and relax the day away.

Ruby Red Rhubarb is my favorite. I have never tried rhubarb curd before. Honestly, I went straight for the vanilla ice cream when you gave suggestions. Rhubarb has always been one of the very first joys of spring. My mother's secret ingredient that seems to enhance everything she ever made with rhubarb is nutmeg. Maybe you would like to add that to your next batch and see if you agree.

I have a recipe from Cafe Beaujolais 'Morning Food' cookbook called Rhubarb Glop. It has a bit of fresh ginger in it which pairs so well with rhubarb. My favorite way to eat is spooned liberally over plain Greek yogurt and sprinkled with homemade granola. My grandmother grew it and always made a cobbler for my birthday, knowing it's my favorite. I really loved seeing some of your garden. That curd looks amazing, my rhubarb isn’t big enough for harvesting this year, but next year I need to remember to try this recipe. I think it would be delicious as a filling in a layer cake, topped with strawberries and whipped cream.

Love this recipe, we've just planted 100 rhubarb in our market garden and after this recipe for sure some of it in years to come will be taken for this purpose, Rhubarb Curb. Yummmmmmmyyyyy! I would eat it on its own I feel sure. or with raspberries from the freezer.

Your property is georgous !! Being a southerner rubarb is not something I grew up eating. But I did get to taste and enjoy a rubarb crumble when I met a lady from Illinois ! It was sooo good !!

My family has made a rhubarb pudding. Ours has tapioca in it. My grandmother made the best. It was sweet but tart at the same time. We poured Half and Half over it. Down the bowl and want more. Thanks Joyce

That looks so amazing. We’d probably eat it with milk. I have never made curd but I make a slightly thickened rhubarb without the butter annd egg and we love it with milk and cream and sometimes chocolate cake. I make all things rhubarb because it’s the first thing from my garden. Now we are just starting with strawberries so bye bye rhubarb. But I do want to try the curd. Thanks. I was taught to cut the leaves off in the garden and leave them by the plant. I have never had any animal sick or poisoned.

I processed rhubarb today too, here in zone 5b! I chopped and bagged it for the freezer, and made 6 loaves of cinnamon rhubarb bread! Thanks for this recipe- I've always made citrus curds, but this is a new one for me!

Thank you , Shaye 🥰 This was so peaceful and beautiful to watch . I have rhubarb coming in for the first time this year and am going to make this. It was a joy to see your family and farm animals. My hope is to have my place leaning to look similar , just not the animals . I will continue to get those products from my local farms. I feel 65 is not the best for starting that part of farming. But chickens , yes :) . I was thinking if you layered the rhubarb with lemon curd and maybe baked it with a meringue topping ☺❤Love to you all , Kathryn

I love the texture of the way you make it but I'm too lazy, I run my rhubard through the juicer, simmer the juice down a little to concentrate the flavor, then make a curd.
