I use baked pumpkin water to make nome made pumpkin spice syrup for coffee. So good for drizzling over fall deserts as well!

That chopper makes a great cole slaw. We love the little squares that is a result of chopping up cabbage with that chopper.

I love all your helpful tips even though I don’t need to store the volume of food you need. I cannot get over how big that little baby is getting. You really look amazing. Although I only had two children, I was all about getting things in order well ahead of time. Having lots of freezer ready meals supplemented with meals brought by friends really made those first few weeks after giving birth easier. I just love the happy vibe of your household and am praying for a serene birth for you. Cannot wait to see baby number 5!

The steam juicers are beyond excellent! They use them a lot in Sweden, where I lived for a time. That juice comes out so stinkin' hot, I pour directly into sterilized bottles and snap the tops shut, just like the nice Swedish ladies taught me. No water bath required. The result is "saft". Mix it 25% saft, 75% water, and it is wicked good juice. Btw, it gets so hot, the pectin gets wrecked, so making jellies out of the juices is pretty difficult.

Having backup onions will be great. I had a bad harvest last year and had to break into a 20 year old #10 can of dried minced onions from the local storehouse. I filled one quart jar with the minced onions and powdered the rest in a food processor and got another quart of onion powder. I hope my harvest is better this year so I have fresh onions again. You are sure getting it all done before baby comes, blessings to you.

Use a small canning lid with the seal removed to scrape your pumpkins. The sharp edges do a great job and it’s easier to hang onto. Works like a champ!

I have successfully freeze dried many types of squash puree and powderized them. They reconstitute well and if you vacuum seal them in mylar will last very long. A chamber vacuum sealer will do mylar bags. I also vacuum seal in mason jars since I don't can as much any more.

I have a different model, but those choppers are Amazing for making salsa. All the peppers pieces end up in uniform sizes. And it’s great for kids to help, because it’s so easy. I use the little dice for the jalapeños.

Yes, I have a chopper that size the jumbo one that I probably had about 12 years I use it sometimes when I don’t feel like dicing potatoes for breakfast for sure I use it for Thanksgiving to chop up the bell pepper, the onion, and whatever else celery whatever else I want to put in there it dices very well like I said I’ve had mine about 12 years and I use it occasionally but for sure on Thanksgiving prepping

Becky a few tips. I use my big electric roaster for 🎃. I pickle my jalapenos in a half and half boiling water and vinegar solution using a 1/2 t salt per pint, ( you can just pour over and it will seal and keep for years, no boiling water bath.) At some point, you will have to let the runners take over in your strawberries ( because the mother plant is generally only good for several years . And then production gets less and less!) Also if you don't just love pre roasting your vegetables for salsa, ots much cheaper and quicker ti process in the food processor and then heat and seal your salsa! We love ours this way - simple easy and quick. I never diced any of my tomatoes but I quarter them and seal in jars. They readily disintegrate into small pieces this way. Or if I truly want diced tomatoes I take a long kitchen knife and slice them up in the jar by running the knife through them once I unsealed the lid! I too love my steamer juicer . It's made grape juice into a one day job instead of 5-6 days job. Don't worry. I'm not critical of your work. I love your videos. I've just been wanting to share some time saving techniques w you for a long time. Best wishes ❤️ keep on gardening and preserving. I know I will. I love it just as you do. Btw does your onion seeds come up well direct sown in the spring? I haven't had much luck. Thank you for any tips you have. You are a very hard worker ❤️

I love these types of videos! I’ve canned pumpkin (and squash) before by leaving it in chunks and pressure canning. I puréed it when I was ready to use it. By using a wide mouth pint jar, I could use my immersion blender and purée right in the jar.

It seems like the stuff at the grocery store where I am goes bad quickly. Onions used to keep for months and now they seem like they go bad in weeks. I dehydrate mine and make a powder in my Ninja Blender. I have the 1400 watt blender with the heating element, and it works great for making spices.

Just a little thought. I did the same thing with my apples. I cored them before I put them in the steam juicer. Then once I thought they were done I put them in my Vitamix. Made the absolute best applesauce. Everyone here says it taste like an CIU apple pudding.

You can can pumpkin puree...I do it for my family of 7 and I'm a 4th generational canner..my great grandparents (who survived the Great depression, my grandparents, my mom and myself all can. I do exactly everything you do with the pumpkin except instead of putting it in a bag put it in jars no water and pressure can. I don't trust everything the government tells me but I also respect that some people aren't comfortable doing it bc of what's been told although you can do it😉 I just wanted to drop this here so people aren't afraid to put up food. I use our puree just like you do from the store in pies, cakes, cookies, muffins, oatmeal, bread, biscuits ect..

I am not successful growing my own onions, but we found an amazing sale on them last fall so we bought and freeze dried a lot! I have some in mylar bags, but some in jars to use as needed (we live an hour from any large stores, so unless we plan ahead perfectly, we tend to run out of items).

If you have a hard time with onions, like I do, try growing leeks instead. An amazing alternative! They grow gangbusters in my onion hating soil.

I like to make onion powder with my dried onions. I don't buy onion powder in the stores. It is great to use to thicken things like spaghetti sauce and many other things if it a little thin.

I sure hope you didn't trash that onion root end !! If you do not know you can slice off the root end 1st then cut into 3 or 4 pcs as long as it has roots attached & plant it in the dirt, water it making sure water gets to the roots but do not over water, and each root end pc😮 will grow you another onion!! I have a vadalia chop wizard and I am on my 3rd. I wear them out and I feel it is worth replacing them. It is so fast. I use them on onions, bell peppers, carrots, and potatoes. etc

You could also use your blender to powder the onions and make onion powder for seasoning. It works really great with freeze dryer. Great info on preparing pumpkin puree, also. Thanks so much.

Becky, do you start all your seeds in your high tunnel without lights or heat mats? It looks like you do. If so, you must get enough light and it must be warm enough in there? Do they get leggy and do you have trouble getting warm crops to germinate? I like how you keep things simple with your soil blocks too Thanks

Thank you so much for confirming that you can't can pumpkin! I thought it was something else i did wrong. I will let hubby know to restore his faith in my canning learning! Can you can chicken soup, etc? I freeze my meat soups, stocks and broths as i worry about it going off or not being food safe. This year will be my third year of learning how to preserve what we grow. The freeze dryer and the other type of drier seem a bit too expensive for our budget, so i can only can or process and put in the freezer. We still have a bunch of spinach and beetroot leaves in the freezer. We also have some rhubarb and Brussels sprouts parts. I need recipe ideas as we have a bunch of carrot, beetroot, spinach and kale leaves ready to harvest soon. We usually buy dried red kidney beans, lentils and split peas, etc par cook them and freeze them in portions for meals. Can these be canned instead? We used our last big jar of home grown tomatoes, last week. Our last big jars are home grown pickled beetroot and Autumn chutney. Really love seeing your tips! I usually peel the butternut squash and pumpkin before baking as i find it easier and lump it all in together. I can only dream of all your appliances and space to grow and afford the electricity bills. I live in London, UK so space is a premium and energy costs are really high. I am really changing up how i process this year. Less chutney and more canned tomatoes. Do you have a kneeling stool for the oven? Would love to see any pregnancy updates, labour videos. Did you do that with the others? Totally understand if you want to keep that side of your life private. x

I bought a chopper that did a smaller dice. When I found one more like yours with the larger dice at $17 I bought it. I used the larger dice chopper for onions, peppers and zucchini. I still have alot of those veggies in the freezer to use up. I might make a big batch of chicken enchilada soup....it's my favorite soup. I think I'll can it to save freezer space. You look tired, but wonderful. I'll be growing Long Island cheese pumpkins for the first. Good to know I should freeze it. Have you freeze dried it yet? Have a wonderful weekend.

Love your videos! What variety of pumpkin is that? Ide love to have some long storing kind. Also did you notice a smell in your freezedryer after doing onion? I need to process mine but I'm nervous about stinking up my machine .

It’s Long Island Cheese pumpkin. And yes on the onions in the freeze drier, the smell is strong! Our machine is outside and we are doing a batch of cilantro next, which is a good match for a little onion aroma 😂

We bought a french fry bagger/scoop from Amazon to make moving food from our freeze dryer trays to both mylar bags and mason jars (topped with funnel). I’m sure it does destroy some nutrition, but not as much commercially made juice.

Why not freeze dry some pumpkin puree? I didnt know if you had a particular reason.

I love having FD pumpkin purée. It’s so handy. I just measure out 2 cups of powder (or whatever the recipe calls for) add water until I get the consistency I want and carry on with my recipe. It works great!

They can can pumpkin puree in a factory. So you can home can it. They don't have magic in the factories.

Thanks! I realize now I phrased that wrong in the video. It’s not that it can’t be done, it just isn’t recommended. I totally respect if others want to do that. I have too much anxiety around food safety to try otherwise but I appreciate you saying this for others.
